I’ve been making fish cakes all my life and never thought about adding lemon zest but followed your instructions and WOW they were delicious! It’ll be lemon zest from this point on! Thanks!

Good recipe thank you. Just a tip for your mashed spuds - wash the starch off them after cutting then they won’t go all gluey like your ones did. Also start with cold salted water for more even cooking.

Hmm. I hadn't thought of fishcake with potatoes. I'm from St. Lucia and we make fishcakes with flour, saltfish and natural seasonings. It's delicious when make right.

One mistake here - if your breading anything (schnitzels, pork chops, fish etc.) always dip them first in flour and then in the egg and breadcrumbs. The flour acts as a glue to hold everything together and stops the breadcrumbs falling off.

Great recipe - just tried it. Imho, the mint is essential - just not too much.
Even my grandkids loved it - and getting them to eat anything not handed to them by some guy in a paper hat is an achievement.
Just get one thing straight, mate. Some of us LOVE lumpy mash! 😊😊

I'm from Rhode Island USA, my parents were from Sweden and Ireland and they made Cod Cakes for breakfast at least 3 times a week with beans, everybody here in my city made these. I hated them! Now that I am in my 50's, I love them. The only things that are different from your recipe is we did not use smoked fish, we were poor and I had 8 brothers and sisters and smoked fish was expensive. But we lived near ocean and fresh Cod was cheap or free to catch. We also used celery seed and celery salt, 1 small finely minced onion and no breadcrumbs, I do like them with the breadcrumbs better. We just pan fried them in butter and oil. They ALWAYS were served with beans and tartar sauce. Now they are served for dinner here rather than breakfast. Back in the old days breakfast was always a big meal not so much these days. Great video...are you from Australia?

Fish varies alot depending on where you are in the world. Fresh fish, which can also be cheap would work fine too! Breadcrumbs are normally not very fresh anyway. A good breadcrumb comes from stale bread!

I love how simple the recipe is...but I don't like the idea of the fishcakes swimming in oil while cooking...personally I'd just use a squirt of oil in the pan & spread it around [especially if using a non-stick pan]. This way your recipe becomes much healthier, & not dripping with oil when removed from the pan. Thank you for this recipe...will try it for sure! :)
