Save this fluffiest doughnut recipe! No mixer needed

  • Time to browse through old pastry notebooks and remember the times when before learning to mix doughs or anything with a mixer, we had to learn everything by hand. Yes, that’s right, in today's video we are travelling to pastry school class 1 where we will work out a little. Ready? Let’s go.
    LET'S BE FRIENDS

    Doughnut recipe :
    300g strong flour
    15g fresh yeast
    20 milk powder (will make the dough creamier and silkier)
    2 eggs (room temperature)
    40g butter
    40g sugar
    vanilla
    a pinch of salt
    ± 110ml H2O (room temp)
    Pastry Cream:
    300g Milk
    4 Egg yolks
    50g Sugar
    10g Plain flour
    10g Cornflour (Starch)
    Hazelnut Praline:
    120g Roasted hazelnuts
    10g Black sesame
    10g White sesame
    125g Caster sugar
    30g Water
    1g Sea salt
    Whipped cream:
    200g Double cream
    25g Icing sugar
    Vanilla
    For the final filling:
    Mix pastry cream with 100g Praliné + all whipped cream

    Finally got a chance to watch this. Brings back memories of years ago when I first started in the bakery….as the donut fryer (in US, it’s quite often your entry into the bakery). Thank you for sharing.
    I didn’t get a chance to make the Valentine’s pastries due to a family emergency,but they are on my to do list.

    Kris they look delicious!!! Also thank you for the tip with the custard, I was always getting so much foam because I used a whisk the whole time but that tip about using a spatula at the beginning is amazing!! ❤

      Yes indeed, little things make the difference:) the same with custard, I tend to use spatula as much as I can until it’s absolutely needed.

      Yes exactly, we incorporate a lot of H2o so the dough is super light 🥲 Nevertheless, a long gluten development does the magic🪄

    Unfortunately those of us with cheaper hobs cant make doughnuts. My hobs has 2 settings. Too hot so doughnuts burn, and too cold so they get all greasy! Didnt waste effort second time and sruck to cinnamon rolls! But i need to try to make this cream!

      Hey! Yes of it happens don’t waste your time, however, you can try baking them in the oven and then fill them. It won’t be the true doughnut but will still taste nice :))

    Do u need to have windowpane or just until it's smooth looking after the initial kneading?

      Hey! Yes the dough should pass the windowpane test, moreover, once you feel the dough coming together it’s a strong indication that we are there. When we leave it to rest the dough gets stronger and leaves us with a beautiful texture. ☺️ while shaping balls don’t use too much pressure, leave it light :))

      hi, go ahead and try! To get active dry divide fresh yeast amount to 2, and to get instant yeast amount use ± 35% of fresh yeast. You can also check online calculators/converters 🙌🏻

    When i put dough to fridge to rest overnight dough will be better or not and why ?

      hey, it wont be worse for sure, you can plan and do a night before and finish them the next day, OR do everything the same day giving enough of time to rest, the result will be the same :) if you do them, share the result on my IG, would love to see it!🙌🏻

    Hey! I need your help.. whenever i make croissants and take them out of the oven they look like a honeycomb inside.. but they are very buttery and greasy. (I use normal butter from the supermarket.. hard to find butter for croissants where I live.) Is it the butter or am I doing something wrong? I would be very happy about an answer!
