Nice video, thanks. For the one baked in stainless, when you remove the lid you could take the loaf out of the DO and let it finish baking on the rack to get the crust more golden.
You may have a mold problem in your home. If you’re feeding your sourdough often, at least every couple days, and it’s growing mold rapidly, I would look into having your home tested.
