    🍫🎃🥞 Chocolate Chip Pumpkin Pancakes
    Ingredients:
    1 cup unbleached flour
    1tbs organic cane sugar
    1tsp baking powder
    1/2 tsp ground cinnamon
    pinch of salt
    1/4 cup pure pumpkin puree
    1 cup almond milk
    1/2 tsp vanilla extract
    1/4 cup chocolate chips (unsweetened)
    Coconut oil to cook pancakes with
    Pure maple syrup to taste
    Directions:
    Combine all dry ingredients, except the chocolate chips, into a medium mixing bowl and give it a quick stir. Then add the wet ingredients. Mix well and add chocolate chips. In a non stick pan, melt enough coconut oil to coat on medium heat. Pour about 1/4 cup of batter into hot pan. Cook about 3 minutes per side. Transfer to a plate and pour over maple syrup to taste. Yield about 6 pancakes.
    🍤🌮 Spicy Shrimp Tacos
    Ingredients:
    2 cups organic purple cabbage (shredded)
    1 cup thinly sliced carrots (I used garden carrots)
    1 cup Roma tomatoes (chopped)
    6-7 sprigs of cilantro
    2 cups shrimp (peeled + deveined)
    1 tsp paprika
    1 tsp garlic powder
    1/2 cup mayonnaise (can be substituted with greek yogurt or sour cream)
    1 tbs sriracha sauce
    pickled red onions
    cilantro + lime dressing (recipe below)
    Directions:
    Add honey + lime dressing to prepared vegetables in a bowl and massage it in. Let sit while you prepare and cook the shrimp. Add garlic powder and paprika to shrimp and cook on medium heat in a frying pan, about 2 mins per side. Transfer to a cutting board and slice shrimp into small pieces. Now mix sriracha sauce with mayonnaise. Place shrimp, slaw, pickled red onions, sriracha mixture, and extra cilantro into each tortilla and enjoy!
    🍯 Honey + Lime Dressing
    Ingredients:
    1 whole lime
    1 tbs pure honey
    a pinch of salt and pepper
    1 tbs olive oil
    Directions:
    Put all ingredients into a jar and mix well
    🍲 Chicken Porridge
    Ingredients:
    4 cups chicken broth
    1 cup filtered water
    3/4 cup white rice
    1 bone in chicken thigh
    Few chunky slices of ginger and lemongrass
    Scallion, cilantro, and dried red onions (can be found at the Asian aisle) for garnish
    Salt and pepper to taste
    Directions:
    Put chicken broth, water, chicken thigh, rice, lemongrass, and ginger into a pot and bring to a full boil for a minute. Lower the heat to a low boil and cook for approximately 30 mins. Turn off heat, remove chicken thigh and shred. Discard lemongrass and ginger. Pour shredded chicken back into pot. Add salt and pepper to taste. Spoon soup into bowl and add garnish.
