🍎🥮 Apple Upside Down Mini Cakes
INGREDIENTS
For the topping:
1 medium Gala apple (half sliced and half diced)
1/4 cup brown sugar
2.5 tbs melted butter
Cake mix:
1 1/4 cup all purpose flour
1/4 tsp salt
1 tsp cinnamon
1 1/4 tsp baking powder
1/4 tsp nutmeg
3/4 cup sugar
1/2 cup butter (about 1 stick ) room temperature
1 tsp vanilla extract
1 large egg
1 cup buttermilk
Preheat oven to 350F. Grease a jumbo muffin pan with some of the melted butter. Mix the rest of the melted butter in with brown sugar. Divide evenly amongst the pan. Arrange about 4 slices of apples on top of brown sugar mixture.
In a medium bowl, cream the butter with sugar. Add the egg and vanilla and mix well. In another bowl, mix the first 5 dry ingredients together. Now add half of the buttermilk and half of the dry mixture into the wet mixture. Mix well then pour in the rest and continue mixing. Add diced apples.
Divide cake mix evenly into each of the muffin cups. Bake for approximately 25-30 mins. Remove from oven and let cool for about 10 minutes. Place a cooling rack, on top of muffin pan and flip upside down. Cakes should slide out easily. Give it a little shake or use a knife if need to. Best enjoyed warm :)
