I took the extra effort to make it easy for me and converted all d grams in tbsp & cups measurements.. I’m gonna list it below for people who live in USA atleast. For cupcakes 1/2 cup self raising flour 1/2 cup white sugar 8.75tbsp softened butter 1/4tsp soda 2 large eggs 1 tbsp expresso 1/2tbsp rum or coffee liquor or kahalua For Mascarpone icing 5.35tbsp softened unsalted butter 1/2 cup mascarpone cheese 2 cups+3/4th cup+2tbsp icing sugar For the cream filling 5.19tbsp heavy cream 1tsp castor sugar 1tbsp espresso coffee 1/2tbsp rum or coffee liquor or kalahua Now this is Jemmas measurements, I altered little bit to get 12 CC. Instead of 1/2 cup flour only I added 4tbsp more & same for sugar, 1/2 cup plus 2tbsp more. Also added dark rum as everyone who said in d comments is right that no tiramisu is complete wdout some liquor. Last alteration was d icing sugar,,, I only did 2cups & a shying 3/4th cup. If u follow her instructions of baking to d T, d CC came out phenomenal. Thx JEMMA.

Just visited the C&D shop about 2 days ago, and it was absolutely amazing!The cupcakes were all soft and fluffy and moist and the staff was very friendly. I was sooooo happy to receive a autographed copy of Jemma's book! If anyone is planning to go there, I would definitely recommend it.
Went to Crumbs and Doilies today, ticked off something on my bucket list! The cupcakes we got were absolutely scrumptious! Just sad I didn't get to meet Jemma 😞 Still such a good experience and the staff were so lovely!

I love Tiramisu😍 but instead of using coffee for the filling I would use Amaretto as it tastes so good with the other ingredients. Great recipe Jemma 😊

Method 1. Sift flour, bicarbonate of soda & caster sugar 2. Add butter and eggs 3. Mix on a medium speed for about 1 minute 4. Turn speed right down and add 1.5 tbsp of strong coffee 5. Turn speed up to medium and beat for 30seconds 6. Distribute amongst 12 cupcake cases 7. Bake at 170C for 20-22min 8. To make the Mascarpone icing, add butter and mascarpone and beat on medium for 2 mins 9. Add sifted icing sugar in two stages beating well at each stage 10. For filling, add coffee, sugar and cream and whisk to soft peaks 11. Make holes with apple corer and fill with filling 12. Top with mascarpone and dust with cocoa powder
Hi, Jemma! That looks really great, but I feel like those cupcakes are missing one key ingredient - some kind of alcohol, preferably amaretto or dark rum. I feel like flavour and texture wise it would work best in the filling, but I fear that additional liquid wouldn't allow for the filling to whip up properly. Do you have any suggestions?
RolandsSh well you could either replace the coffee and add the rum (Baileys woud be nice too!) or add something to make it thicker... here in the Netherlands they sell "klop fix" which is a powder you can add to your whipped cream! Maybe ask in a supermarket if they sell something like that? Orrrr you could add some more mascarpone 😏 I'm kind of rambling here but I hope it helps 😂
You can prepare an alcoholic sugar syrup and sprinkle it in the cupcake's holes before adding the filling, or add 1 tbs of your favourite alocholic drink in the Mascarpone icing :)
I thought so too. It just isn't really Tiramisu without amaretto. I would add the amaretto in the cupcake. Maybe half amaretto half coffee and then depending on how much alcohol you want in it same for the cream.

Hi Jemma, I'd like to ask for your advice. I recently found a tiramisu cake recipe, which I would like to make for an occasion, however, I'm a bit concerned about the icing. The recipe is a bit vague, it says I should cream 150 g soft butter with 100 g icing sugar, then add 600 g mascarpone. I'm terrified that it's gonna curdle. What do you suggest? Adding the mascarpone in small batches, mixing constantly? Or should I limit mixing to a minimum? I suppose everything should be at room temp.... Thanks so much!

This is a non recipe question but what cases do you use? Mine are either too big so almost like muffin cases or fairy ones which are too small. And find it hard to measure out even amount so they are level once cooked 😩 x

Can you make this as a whole cake instead of cupcakes? I mean using the all in one method/ these measurements? If so what size tin? 😅
