The fluffy eggs mixture appears to be eggs with a scoop of soy sauce mixed in. The breading appears to be beaten eggs+potato+corn starch+secret sauce 🙂
Food seems amazing, acceptable price, atmosphere looks good. Just one thing I'm having a difficult time adapting to is that why in Japan people use "soup" spoon to eat their rice instead of a metal spoon?
That soup spoon (we call them renge (れんげ)) is very commonly used for all types of food at Chinese restaurants in Japan. Don't know why but Chinese cuisine = renge is kinda given. You very rarely see metal ones used except for sweets like mango pudding or almond tofu (杏仁豆腐) etc
It's the Chinese spoon 🙂 This type of spoon (material) is slow to conduct and retain heat easier on the tongue. And thus food that's served cold can have a metal spoon.
