The magical thing anout aging meat, is time will tell if the meat is bad or good, if is look or smell like you wouldn't eat it, then don't eat it....Everything else is safe:)
20-25 bucks for a piece of aged seems good
5$ for 1 nigiri ? here is 3€ for 2 .. american cities are crazy expensive XD
