Ive used the hall effect joycon module in my conversions, but to get a better throw i extend the joycon knob out and you end up with the same amount of movement as a regular joystick
Yes extensions help for sure. But there's still a difference in feel because of the gimbal geometry. Also, full size sticks will probably last longer because of the larger and more robust centering spring.
Came across your videos randomly looking for guidance as i want to make the switch to the tartarus v2 but i'm not a soldering guy. I'm somewhat techie but the soldering throws me. Are you selling modded tartarus v2 with hall effect analogs? That would save me the trouble of trying to do this myself, but I see this as a necessary mod due to the dredded dpad issues i've been seeing with the tartarus V2. I didn't want to go the Azeron route because of the cost and i've seen hundreds of people swear by the logitech g13 and the tartarus is the closest i've seen albeit for the lack of true analog stick.

how do you code for the hall effect sensors vs run-of-the-mill potentiometers?
No differently. These hall effect sticks have IC's accompanying them that amplifies and filters the very weak signal coming off the sensors. You can see in my code github.com/tuffrabit/waveshare-joystick. I don't have separate handlers for hall effect vs pots.
