  • Pinto Bean Fritters -Meat Substitute - One Pot Leftover Meal - Veggie Burgers - The Hillbilly Kitchen
    Pinto bean fritters are tasty little treats that you can mix up for pennies. You can eat them as a snack, appetizer, side dish, meal or a veggie burger. They are super easy with endless varieties. Have fun with this recipe. Change the ingredients to suit your taste or use what you have on hand. Whatever you do don’t throw out the few spoons of leftovers you have the next time you make beans and taters for dinner, save them for some Pinto Bean Fritters.
    Pinto bean fritters are another old recipe that saved our ancestors from starvation, and they are much tastier than any of that outrageously expensive emergency food. Make sure you have a bag of pinto beans in your pantry.

    Ingredients:
    15 ounce can Pinto Beans or 1 ½ cup leftover Pintos
    - • Pinto Beans - Old Fash...
    ½ cup Breadcrumbs or Flour or Cornmeal (leftover cornbread)
    - • Southern Cornbread - S...
    1 Egg
    Milk to adjust consistency
    Salt, Pepper and Spices to taste
    Options:
    ½ cup Grated Cheese (add in mix or top)
    Sour Cream (add in mix or top)
    ½ cup Chopped Peppers
    ½ cup Chopped Onions
    ½ cup Corn
    Leftover fried Potatoes (add in mix or on the side)

    Tuned in for the bean cakes and got tears in my eyes when you spoke of us all needing the lord!I was saved and baptized two years ago and let the world and depression take me away from the lord!I know it was I that left him but now when I pray it feels like I'm just talking to myself when I pray for my soul and forgiveness when I say grace and pray for others I feel a peace but not when I pray for myself!I have prayed for you the sadness in your eyes breaks my heart I can't imagine the pain your going through your faith is remarkable!if anyone sees this and would like to say a prayer for me and my family I'd really appreciate it!!love this channel as a fellow hillbilly (east KY) and a fellow Becky lol!

      Rebecca, I've just prayed for you and your family asking for many Blessings, healing, and protection. The Lord always hears your prayers regardless if it's praying for yourself or others. Never cease praying, this is your communication with the Lord and He loves to hear from you. When I pray for myself, I ask Holy Spirit for wisdom, strength, and direction. I don't know if I feel peace, but I definitely feel confident knowing that I've asked the Lord for these and put it in His hands. I also spend a lot of time praying in gratefulness and thankfulness to our Lord Jesus. Just waking up in the morning is a Blessing, and I want to thank Him. Each day there are so many things to be grateful for seen and unseen. Remember, when you call to the Lord, He hears you and you are not talking just to yourself. Don't put God in a box. He is bigger than you. His thing is forgiveness, love, grace, and mercy for all the days of your life.     Love your channel Becky. My momma used to make these after we had a pot of pintos the night before. She called them "bean patties". She passed away eight years ago, and I haven't had them since. This video really brought tears to my eyes. I will now make these in her honor. Thank you for sharing the Word in all of your videos. You are precious 💖

      l ate bean patties when l visited some cousins in Martin County,Ky back in the 1950's. Times were hard and meat was only served at breakfast (sausage or bacon) and Sunday dinner.We ate what was fresh from the garden or canned by my aunts and cousins.

      I cook & give to others at times. I put leftover in Freezer for second meal.
      I am mostly a baker. People don' t do much baking anymore .Just buy it. It is fun to see grateful people when I Bless them & it keeps me busy. 😊

    Becky, thank you for all that you do for all of us . You are so giving and transparent. Feels like we are old friends chatting in the kitchen while we work. I lost my husband many years ago..20 to be exact. I was 50. He was 59. I have experienced being a single parent, our daughter was 11 at the time of his death. Have relocated to another state, guided her through middle school, high school and college and now I am traveling through my golden years alone . I still have a hard time cooking for one. And some days are better than others as for being fulfilled with daily life. I walk closely with the Lord and trust him for everything. He is my strength, my rock . Be assured that even though it is difficult to experience this new walk through life now, it will get easier with time. We adjust to our circumstances, through our Lord Jesus. May you and yours be richly blessed.

    I made a lot of these at a Heritage Farm festival over an open fire and people couldn't get enough of them. Most had never heard of them. They became a regular fair for most of our festivals.

    I just found your channel. I like to make bean burgers with oats. I add some spices too. Many people of our church love to make oat burgers but I like to add beans and some veggies too. For people who can’t have eggs, use 1 Tbsp of flax seed meal and 3 Tbsp of water. Thank you for sharing your faith in God. 🙏😃

      @@mizsterious "A strong EARTHY flavor..." My dad said that I was crazy and that black-eyed peas were the blandest bean he'd ever eaten when i cooked some for my parents. I love them but haven't cooked them since. Now that it's just me I think I'll try them again. I used to just like them with butter and some biscuits to sop with.

      @@delso-wk9sq Fix blackeyed Peas with some onion & garlic powder & if you have it, a spoon of bacon grease. they're fantastic like that. You might look up a recipe for blackeyed pea caviar, too...it's a cold salad with onions, corn, etc.

    My mother passed on sep 8 1999...I hadnt been watching The Hillbilly Kitchen, was distracted by life... I am sorry for your loss and am grateful for this video for fritters, something I had forgotten about and trully good during these times. God is Good, and I also have a family member w type2 diabetes, and the struggle is real, and the effort, as you said, is intense and never ends. Thank you for reminding us of this. Hugs to you.     Loved learning the toss anything in fritter! Thanks Becky! This recipe is very close to being a bean burger. Black bean, pinto or kidney bean can in a pinch be formed in a patty and BURGERIZED. : ) The red kidney will appear more meat like and depending on the flavorings you can trick the taste buds with liquid smoke or char grill them too!
    I was using grapeseed for the longest time, and learned Avocado Oil is healthier than grape seed. Encourage all to do a side by side comparison. ~ And grateful for the thoughtful reminder, To put God first. Xo

    I love that beautiful painting that’s been around for many many years of our Savior Jesus knocking on a door, the door of our hearts.     If you are vegan or allergic to eggs, you can make a flax egg by mixing One Tablespoon ground flax and Two and a Half Tablespoons of water. Let it rest about five minutes. Thank you, Becky!     A simple, adaptable recipe that will fill tummies and be delicious! The hardest thing for me after my husband passed was learning to shop and cook for 1.     Oh my goodness: my mom use to make these when me and my siblings were living at home and at 72 I’m the youngest. Never thought a simple basic recipe like this would be on social media 👍🏻😋🥰. This was just a way for mom to stretch her meals and we grew up eating great tasting wonderful meals. Thanks for sharing this, brought back wonderful memories. And I still love these.       My mom made them too, She would have been 78 this year. I Miss her so much. I miss my grandma too. she would have been 99 this year. I cooked fritters for my kids too, they would actually ask me to make them. They're adults now, I haven't made them in a long while, because I try to limit fried foods because of my cholestorol, I'll have to cheat and make these and tell them to come eat them with us. :)

      Old cookbooks are full of recipes like this. Like Becky said we may REALLY need to use these recipes soon with the way things are going. I have all sorts of old cookbooks & such. They ARE an education!

    My mother made these a lot when I was a kid. I didn't realize it was because we were so poor. I just thought it was because they were so wonderful. They were one of my favorite things. I still make them today.

    I'm surprised to see you back so soon. God bless you Becky. We've been making pinto bean bean fritters since the 1970s. They are so yummy and, these fritters are a great substitute for meat especially if you can't afford to buy it very often.     My mama doesn't cook much anymore cause of her heart condition and her macular degeneration (blindness) but you cook just like she did and my grandpa and my aunts and uncles.     Hash is another way to use leftovers .. Used to love to it when my grandma in law would fry up her leftovers and serve it with coffee and bread and butter.

A few months ago, I was watching another RUclips channel, Celebrating Appalachia, and Tipper said "larrapin" was used in Appalachia. Well, I was thrilled! My parents were born in Alabama, as was I, but our roots are in eastern Tennessee and western North Carolina. Hearing that word was a gift from God and my sweet mother.⚘

      Walmart has those really large jars of pinto beans for sell. They are down on the bottom of the shelves where they sell canned beans.

      My mother and grandmother always made dressing patties and baked them. I was married with children before I ever had dressing served in a bowl. So much better as patties, though.

    I have never had pinto bean patties but we use to always have pea patties lol ( we got a kick out of calling them that when we were kids ) but it was black eyed pea patties, my nana would always make them on Monday with left overs from Sunday dinner! Loved them so much with lots of butter!!

    When we were stationed in Germany, Dad was in the Army, we had a delay in pay because of the move...and my mom got creative and made open-faced pinto bean sandwiches...which we all thought was excellent! She took bread, spread mashed potatoes on the bread, and mashed pinto beans into the potatoes. She doesn't eat cheese...but she topped ours with sliced cheese. She never let on that this was a survival meal, similar to what she ate during the Depression.

    I love the refried beans idea. Your passage really spoke to me. I have been widowed for 11 1/2 years - and for some reason the loneliness is getting to me more than it should. I gave myself to the Lord in the early 1960's, and yes - I'm sure not perfect. I love watching you and only wish I had someone in my life like you who lived close.

      I guess you could use the canned Chic peas or Gabanzo beans to make fritters also.I have never made fritters from beans, I love my beans boiled with some smoked meat. But I like combining chic peas into tuna salad to add fiber and more protein, and the flavor is neutral, so I will try adding them to salmon croquettes also, and potato salad and deviled eggs.

    Folks that look down on this type of food as "poor folk food" are missing such treats. When spiced up with chili powder, mexican spices and such and shaped into hot dog sized strips they make a superb filling for enchiladas and burritos. Thankyou for making this video. This brings back such sweet memories of such meals. I always thought of this as a treat and served with hot water cornbread and greens was a great meal for our family.

    Fritter Everything! Freezing cooked fritters is the best way I've found to preserve all that zucchini and squash that comes out of the garden all at once. I've found the best way to reheat fritters is straight out of the freezer and into a 350deg air-fryer until warned through (about 5 to 10 min, depending on how big/thick). But a toaster, toaster oven or 350deg big oven works just fine too. I like mine about burger -patty size, because: "fritter sandwich" with pickles, onions, mayo and ketchup!!

      I'm very frugal, but my husband takes it to another level. He frequently encourages me to make a pot of beans, because it's about the cheapest meal ever...but then he doesn't like leftovers, so it's always a struggle to get them eaten before they have to be thrown out. But...like your husband, he loves anything fried! This is definitely going to make me more willing to fire up the crockpot more often.

    Becky, your channel was the spark that started my walk back to God. I dedicated my life to God and baptized when I was 14 years old, but when I was in my 40s I allowed the pressures and disappointments of life and the hypocrisy of other christians discourage me. I stopped congregating, I stopped praying, reading the Bible and replaced my covenant relationship with God with new age nonsense. After almost 10 years of feeling empty, angry and lost, God brought me to your channel sometime last year and your words really touched me. I found myself binge watching your videos more for the ministry than for the recipes. Some people say that God works in mysterious ways, I don't agree. God uses his people to speak to the heart of those in need. My son was brought to God by someone whom he met on facebook by chance. She other Christians from her group ministered to him and prayed with and for him for months. Eventually he was ministering to me. God opened my eyes and softened my heart so that I could once again feel like his child. I am firm in my walk with him and you and Bret were an important part of it. I am grateful for you both and I pray that God continues to give you peace, strength and an unshakable faith. May your ministry continue to help many more. ❤🙏
