    I've been canning on my own for 42 years now. Have pretty much canned everything through the years. I learned from my mom and gram. I have a saying when opening my jars. If when I open them, if I dont hear it suck. I chuck. Short and sweet to remember.

    I would love to see a root cellar and freezer tour. I’d also love to see some meal videos showing the meals you cook from your stored food. Also maybe a video on seed saving. Is there anything you need to do besides gathering and winnowing. Any specific storage requirements?

    Wax beans are always softer than green beans. I have been canning for over thirty years. I plant Jade green beans and pick them on the younger side. They are high producers , taste very good and stay firm. Cherokee wax beans are heirloom and the advantage for them is that they can be left to grow and harvested as a pinto type bean. Also the Cherokee wax bean that has been allowed to grow into a bean can be saved and insures your next crop.

    Hi Chelsea and friends! Yes, to freezer and root cellar tours, I always learn something new. My 2 cents on the gamma lids for buckets... I started out buying gamma lids for my buckets, in the Dallas Texas area the regular lids are $2 the gamma lids are $8 and the food safe (food safe is important) buckets are $3. Unless you are getting in to the buckets frequently, it isn't worth investing in the gamma lids. The bucket lid opener is less than $4 for the plastic one and $10 for the metal one that also has a hammer side for popping the lid back on and don't have to have a mallet. I found the opener tool on amazon, can't find it in stores, and the buckets and both types of lids at my local farm store. Your kids will be able to use the tool too, it's really easy. Thanks for sharing, you have inspired me to organize my pantry better and to preserve foods in different ways. You say thanks for joining you, I say thanks for the work you put in to share with us! edited to add: I use bay leaves to repel pests in my food storage and food safe diatomaceous earth in my buckets to kill pests that hitched a ride in. I started using d.e. after a whole tub of pasta and beans was infested enough that I couldn't eat it. I'm not squeamish either, I'll pick out a bug or two. Homesteading Family sprinkles a layer of d.e. directly on to the food, but I leave mine foods in the bags, sprinkle a light layer on the bottom of the bucket, fill the bucket with food in the original bags, then another sprinkled layer of d.e. over the top. Mary's Nest cautioned me to be careful with d.e. because it can irritate lungs, so that's something to think about too.

    I don’t like canned green beans but I found this recipe in a John Wayne cook book and I love it. Broil onions and 3tbs butter until they get nice and caramelized. While those are cooking, put your quart of drained green beans in a pot with chicken broth. Let it simmer so that the chicken broth reduces to be fairly concentrated. Add a quarter cup of sugar and about a quarter cup of vinegar. Mix in your onions and butter and enjoy. All those measurements are estimates by the way, I don’t measure.

    I used to can corn but not anymore. The lengthly processing time takes away the flavor. I blanch the corn on the cob, cut it off, let it dry, then seal it in bags for the freezer. Cooking it is easy. 10 minutes in boiling water with a tsp of sugar. When it is done, drain it and add butter salt and pepper. It tastes like it just came off the cob. I am a master gardener and I also love to dehydrate food. I am presently learning more about fermentation. I have been canning potatoes for a few years and I was also surprised at how good they are. I really am excited about canning pickled coleslaw!! I have raised 6 kids we live on a fam, dairy for over a hundred years but now we have beef. I love seeing what you are doing.

    We're in the end of times. Earthquakes might happen in places where they don't normally. Be ready for anything because the last thing you want is to lose your food. Your pantry is beautiful and so well stocked that I can see all of the hours of work put into them. Great job!

      They all do it that way and it does make me nervous. No one seems to put a safety barrier in front of the glass. U r right,vwe are at the endtime and earthquakes will happen. I even put something between the jars, so that they do not knock against each others.

    Fun artsy idea for your kiddos....have them make you envelopes for your saved seeds. Its fun to have their drawings and envelopes help keep seeds dry.

    looks great Chelsea!!!! You have been busy! A lot of work, but well worth it. I take it from the storage of cabbage in the house that you are not using the root cellar as much. I saw someone else did that coleslaw and it is very intriguing....will have to find the recipe. Love the new pantry and really like Dan's idea using the chalk board paint!

      I didn’t want to risk losing the cabbage like I did last year. I still have the carrots, beets, turnips and potatoes in the root cellar.

      @@LittleMountainRanch Makes sense. My cabbage, nor my garden, did great...my fault partially. But I did buy some cabbage for refrigerator coleslaw, and kraut - the kraut I did something wrong, but the 3 heads for sour cabbage heads are working nicely. I was going to mention too that I have one spaghetti squash from last year yet an it still tastes fine. Amazed at how this years are actually ripening from green/light yellow. Hope all is well.

    Reminds me of my growing up home in PA with farms and root cellars, house cellars etc. my Gram made catsup and wines and relishes etc in addition to produce. She had a smokehouse and a dairy and flowers too! She loved flowers. I inherited her wood cookstove which is broken beyond repair but I planted lilacs and irises by it, to remember her. I have a wren nest box by this area to remember my other Grandma. See all the memories you’re creating for your little ones?!

    I use those big sauce bottles when I'm making pancakes, fast, easy and less messy. Just fill with wet pancake mix and go

    I see a lot of glass jars that are unprotected.... Any natural disaster can throw them to the floor. I think it will be wise to put some rails or wood piece to secure them

    I just noticed my favorite tea on your shelf! Chai spice STASH brand! I don’t drink coffee..I don’t drink hot chocolate, no soda or fruit juices! I live on chai spice! It keeps me from caving in to sugar cravings! Delicious!

    Have you thought about making a canning vlog series? I know you have yome videos about it, but it would be interesting to see how do you do it during harvest time. How do you prepare and process all the produce and meat for canning.

    Love these videos! I don't mean to be 'that person', but just so you're aware, medicinal herbs don't retain as much of their quality in a dehydrator. It takes about two weeks for the oils in most herbs to break down properly to release those properties and they aren't able to do so in the dehydrating process. Again, I don't mean to be a hater, I love the video, but they will be significantly more potent if naturally dried. I strongly recommend Foraging Texas for more info on this, but there are other resources as well!

    First off, you've had 11 kids?!? Wow 🤯😍 second the book i started with was Rosemary Gladstar's Medicinal Herbs: A Beginners Guide. I also have Bushcraft First Aid by Dave Canterbury that I use as a additional source. Currently I have Dried: Yarrow, Peppermint, Oregano, Rosemary, Calendula, Chamomile, Ginger, Danddelion Roots, Tumeric, Basil, Parsley. Seeds for this coming spring i have Common Plantain, Thyme, Sage, Lavender, Marigold, Echinacea, & Basil so far. I personally use a mortar & pestle but its only enough herbs for myself & my elderly mother. I also only am able to have a standing flower bed thats roughly 4'×2'. I have to be picky on what I grow, harvest from the land and buy. We also have a small 2 bedroom duplex on the edge of a smallish town. Where I grew up my mom had a acre garden for food & flowers, we lived in a town of 94 from 1991-1998. In 98' we moved a couple miles outside of town on my grandmas homestead, she needed the help and her health was dwindling rapidly. Her "farm" was about 7 acres. There was a Christmas Tree Farm for more than half of it, a small Black Walnut Grove & a small Apple Orchard. My grandpa planted all the apple trees in 1971 when they bought the property. We had folks coming from all over the state every summer for cider, apples, & pie. Then those same folks came back every winter for a Christmas Tree, Wreath, Flower Arrangements, and homemade hot chocolate & peppernuts (hard cinnamon dough balls about the size of a dime). Grandma canned vegs, fruits and anything she could to make things last. We always had spare kerosene, toilet paper, board games, canned goods, and everything else to last us a minimal of 3 months. We had some really harsh winters here in Nebraska, the cellar & then basement would flood every spring. We had a creek that ran through the property. Grandma bought me a break action 410 when I was about 8 or 9. My dog Oreo (1/2 Cocker Spaniel, 1/4 black lab & 1/4 Dalmatian) & I would be out huntin for rabbits & squirrels when id get off the bus. Sorry for going so far into detail... lookin back on those few memories I have (was in a car accident and have memory loss) of my grandma raising us while my mom worked is one of the reasons I "prep" now. If you & the husband are every in central nebraska, yall are welcome here :)

    That should last you at least until spring, eh?
    That tool for your buckets can usually be found at your local hardware store, possibly in the paint section (that’s where Home Depot also keeps their gamma lids). Or you can order it online. Prices usually are below $10
    Gamma lids usually cost more then a bucket and standard lid together, but it’s well worth it. ULine is a company these items can be ordered from in bulk. You may have a similar company in Canada.
    Coming from the restaurant industry, I’m more than willing to spend money on professional quality food storage solutions. It’s a long term investment.
    We never store anything directly on the ground, even cleaning products. At a minimum I’d put done 2x4 lumber on the floor to put boxes in top.

      Also, I pretty much have a blank slate in the basement and it is walk out which is nice. I’m planning a walk in cooler and a cold pantry. If you could would you just have all your pantry in one bigger room? Or do you like having multiple smaller spaces.

    Wonderful work, excellent
    But you might want to think about this ,
    There are earthquake prediction for future . I wrap all my jars with bubble wrap to prevent from breaking and put in toats to also prevent from falling off shelf, just in case of a earthquake.
    I pray it will never happen.

    I love seeing a well stocked pantry! I too grew up in a canning family, even most of my extended family canned as well. We can every year, nearly year round, to help it go quicker we have two pressure canners, one we've had for 30+ years and it's still going strong. In fact I'll have both of them running tomorrow since we found beef on sale. Dehydrating is another great way to store food, it takes up so much less space and lasts longer, but nothing beats those instant meals canning provides. Yukon chief is a good corn variety for cooler climates.

    you may want to switch your cheese fridge to the other side of the floor (behind the door) so you can get at those jars that are behind and by it! you may also want to get moving shelfs (shelfs on wheels) or a cart!

    Excellent job preserving your harvest and preparing your extended pantry! Ok here's my latest use on the pickled coleslaw. Drain, and caramelize in sesame oil. Use as a delicious topping on asian dishes. Just served over korean beef tacos and do yummy

    sick! im youngest of 11 kids! we where all homeschooled and we grew up in a farmhouse on a big property and my dad worked a mile down the road at a historical far!! we buy stuff in bulk too, we can as well! love seeing other family like ours!

    I am so very, very impressed - with both all the hard work you have done in creating and organizing these spaces, and the work that went into growing and preserving so much! I do have a question though - how did you learn how to do this all, and on such a scale? Was it just a really steep learning curve, or did your families also do this as you were growing up?

      It was a long and slow process over the past 20 years. I learned to can when I was a kid, from my mom, but everything else I learned from books and youtube. Some things were harder to learn than others, but after awhile the knowledge compounds and it all gets easier. Stick with it, you’ll get there!❤️

    My pantry is sooo different. I do not know half these foods. Funny on how different our tastes. I think the only thing we have in common is tomatoes, honey, green beans, carrots, acv, vinegar and coconut milk. Most of my pantry is dried herbs, dried vegetables, grains and dry legumes. We eat a lot of oatmeal, rice with beans and bean/lentil soups. Million ways to make lentils and beans 😝.

    in regards to the mushy beans: Are you cold packing those, I cold pack mine and add lightly salted water. Then pressure can for 20 min. I did not have any issues...

    You should also add stinging nettle. It's really really good for you and works wonderfully in teas and can even be used in cooking.

    Yes. Definitely label. So your husband and kids know what's what. I put my saved seeds in the freezer. It makes them think it's wintertime and they go dormant.

    When you get good at labeling, you could run your dried herbs through the meat grinder to turn them to powder and save space.

    WOW! What wonderful upgrades to your pantries! Your storage seems _huge_ compared to the first year's video! I love the wide, deep shelves!
    Labelling schmabelling! I think you and your sous-chef(s) will learn more by _not_ labelling everything because you will use your senses to identify them. However, I adore the idea of chalkboard paint on the safety rails! So clever!
    I *_love_* hearing you say, "so-and-so loves _x,_ so I made/bought alot of it" (especially when so-and-so is Dan). What a wonderfully loving, generous, and kind thing to do. More of _that,_ please.
    Have you tried fermenting your green beans? They'll stay crunchy, it's easy to ferment them, and they are super nutritious & delicious. Look up "lacto-fermented dilly beans" Lacto fermentation works with most vegetables, too. I think the root cellar or the cold pantry are the places to store fermented foods.
    This was such a wonderful video, Chelsea! (Especially appreciated for _this_ year.) Thank you!
    (Of course we want freezer and root cellar tours. :) )
    The cider orchard I planted 4 years ago is beginning to produce; I got decent crops from half of the 8 trees. Homemade apple cider vinegar, appe wine and apple cider! It was also a good year for quince, raspberries and (some of) the strawberries. One of my currant bushes also bore fruit for the first time ever, but sawfly larva got the others. The deer are munching on my peaches, the best strawberries and the Cornelian cherries, though.

    you can ofcourse come up with an Alpha numeric code for all your foods in your pantry (i.e. Mint MIN101, Crushed/powdered mint MINPWD102, if its wet..then WETMIN103 ) ofcourse you'd have to write down the label with the explination so anyone can understand it..then simply label the jar and you'd be done.
    Questions: 1. do you or plan to make candles or scented candles?
    2. do you keep or make any soap tissue tablets.. would be nice to have those itsybitsy that you can use to clean wash your hands n face with adding 3 tablespoons of water to the tablet and just rinse?

    I went through the deep storage last month. Sent 25 gallons of peanut oil and 5 gallons of olive oil to be recycled into biodiesel. Even in controlled storage, it goes rancid over time.

    This was so interesting. I am thinking bout making teas this year and dehydrating some things. It just sounds so nice. And I saved some seeds this year or rather last year. We'll see if I did it right. I look forward to seeing your seed saving series. Your pantry is absolutely beautiful. It is just beautiful...definitely Pinterest Perfect. I love relish. I'll have to make some of that this year. I didn't get any basil...couldn't find it to plant. I'm going to look out for it earlier this year. Nice video. Thank you.

    Your pantry is beautiful and I love that you're doing cheese!! I really like that you have your herbs on shallower-depth shelves-makes sense. Great working station, too! Smart canning up the leftover brine for marinade. I've had to end up throwing mine away :(.. Did you have any trouble getting more jars?
