Random probably basic question - what is the reasoning behind letting dough rise if the gas is removed after you roll out the dough? Looks delicious though! :)
Well the yeast and the rising creates little pockets in the dough. Even when the air is pressed out, the little bubbles expand as it bakes so the bread ends up nice and fluffy. Skipping the yeast will made a dough with a similar consistency but when baked it will be dense and likely not cooked through.
