Whenever possible, I try and do some food prepping to make meals easier. Today’s food prep is to stew a nearly three and a half pound chuck roast in tomato and chili powder. The cooking took some time but was well worth the effort.
Just as I finished the cooking, the dense fog burned off and we got outside and walked Moonstone Beach. I found a huge sea cave that is only accessible at low tide. I’m not sure why this area is named Moonstone, but it does feel like being on another world.

Oh, I don’t really have a recipe. I wing it every time. It never comes out exactly the same each time. But that’s part of what makes it interesting

Have you ever used candle warmers to keep your coffee warm?
No I don’t have mugs that would work. Both of my mugs are double walled insulated. Coffee stays warm in the mugs for quite a while anyway

Roast looks so good! My stove died couple years back, bought a hot plate with covered burner for cooking, yes queen of procrastination, but also so used to it now and no issues, I do quite well with one burner. So I enjoy getting new ideas watching how you cook with one burner.

I’d never heard of Moonstone Beach. It’s absolutely gorgeous! Thanks for taking us there. I love the fog……your shirt looks great by the way. The meat looked delicious as well.
Right around the rocks next to Moonstone is Luffenholtz Beach which is the only square shaped beach I’ve ever seen in my life. It’s best at low tide. The name the Wiyot people gave it is Du’ Pelou’l, which means “where they get flint”. As you’d guess the rocks and cliffs contain flint.
When I was there a couple of weeks ago a group of bohemian hippies were juggling, twirling sticks, and one guy was playing a pan flute. Got to love Humboldt.
It's the little things not thought of and the simple views not expected that just makes it all a completeness to the amazing beauty of natures constant motion through change. The secrets that lie hidden awaiting to be explored that is pure joy on life's Naturesque.

Hi Scott, those caves are awesome. They don't go to much deeper and yes there are a couple more caves but you have to go further north up the beach during low tide.🐢🐩🐶🐕🌺✨🌈🌊🌻🐳🌈

Oooh, Scott! That meat made me want to do that with a pork roast. That would be great for quick meals. Thanks for the idea. And you buy local coffee, just don't always get it drunk up before it's time to ,move. I think all the vendors still appreciate not only the business but the shout outs too.

Take the meat off of the stove for 5 minutes to make your coffee.
It’s much more efficient than using 4 hours of your battery bank.

cool, I really like Moonstone and Little River and am glad you do too. I used to love walking in fog like that on the beach. I enjoy that drive from there north to Trinidad via Scenic Dr past Houda Cove, Luffenholtz Beach, Baker Beach. Then on past Trinidad park to Sue-Meg Park via Stagecoach road/Pacific Point road is so cool. I was glad you bought the local grass fed beef and the your cooking again forced me to pick up the phone and call B**e's and order take out. Your tacos always really look good. I'm concerned about that transmission.

I just adore the foggy, shades-of-grey seascape, and Moonstone Beach is the perfect name for it. Glad you still have the electric kettle, so you didn't have to wait 2.5 hours for a cup! And those caves were very cool.

In the beginning I was thinking how much i love the simplicity of your life...and then came the explanation of solar power, wattage, usage charge time, etc...haha...excellent explanation I'm going to send it to my brother as he's considering solar for his travel truck, so thank you for that! The tree trunk was so cool, wondering if it is almost petrified!

Between California, Oregon and Washington, which of the three areas do you prefer to be in, and are there any pros/cons you've encountered when comparing the three? Personally I'm looking to make Oregon my new home eventually, but am unsure of exactly what to expect. Just looking mainly for peace and quiet.
Oh I have a lot of things to say on this subject. Northern California is my favorite. Western Washington can be very easy for vanlife, but the weather isn’t as nice as Humboldt County. If you take a look at my videos, you’ll see how I feel about Oregon.

From what I recall of that cave, it gets narrow and you have squat down pretty far and then it just suddenly stops. You never lose sight of the mouth of the cave, but it IS pretty cool!
I do enjoy being here in Humboldt. Oh, cool. I got to get back and explore the cave!

What a gorgeous beach day. Just the weather for stewing beef and a nap, IMO. Those tacos looked absolutely amazing, but I've gotta tell you beef cooked in red wine a la Julia Child ranks at or near the top of my list of favorite foods. And you talking about the visible tripod (nevermind it!) only made me think about what great video work you do. Today's installment was sublime:)

You're considering cooking that on an electric stove I think, but I think a crockpot might work?
I might be wrong since I've never used one before, but isn't a crock-pot for cooking at low temperature for a long time. but then you are carrying around a crockpot. I vote stay where you are. How green is it to drive to Seattle for coffee? On the other hand, if you live for coffee it would probably be the thing to do. Decisions, decisions.

I invested in Solar panels for my house so my electric bill went from about $300 to $40.... much better. ☀️ ☕️. I guess I'm spoiled power wise... wish I could share some with you. 🙏

I'm using a 100 Ah Lithium Battery too. Only one 160 Watt Solarpanel, but a Booster (Alternator). Running a Fridge and a Webasto Diesel Heater. Fridge alone about 10 days of runningtime. Greetings from Germany

You can get a super insulated bag which once you’ve brought your pot to the boil you can put it in to slowly cook for the day- maybe bring it back to the boil half way. Minimal power and cooks slowly for the day. Forgotten what it’s called but got it from Amazon. It looks like a big pumpkin 🇬🇧❤️love watching you . Many thanks

The first walk on the beach, it barrly even looked real. So cool! Thanks for showing the steps to stewing meat, that is one thing i didn't know how to do but always wanted to try but never bothered to look it up, now i know, and you are more interesting than reading a cookbook.

Hey Scott, a while back I spoke with a mechanic and Promaster City owner and he had advice on keeping your van running better , longer and cheaper. I don’t want bore you if that’s not of interest. Some people get glazed eyes when I talk about this stuff 😊
