Homemade lavender syrup

  • FULL INSTRUCTIONS:
    ingredients:
    200 g of fresh lavender blossoms *
    2 organic lemons
    50 g of citric acid
    2,5 l of water
    2 kg of granulated sugar **
    * You can definitely use less, I used this much for a really strong lavender flavor.
    ** I don't recommend using less, because sugar is the preservative and keeps the syrup fresh for a longer amount of time.

    directions:
    Cut fresh lavender blossoms and put them in a pot. Add lemon slices, citric acid and water and make sure that everything is fully soaked. Put the pot into the fridge and let it rest for 24 - 48 hours (depends on how strong you want the syrup).
    Then remove the lemons and lavender blossoms and squeeze out the excess water. TIP: You can leave some blossoms for decorating the syrup bottles later. Strain the infused water through cloth and warm it up (don't boil). Add sugar and stir until it fully dissolves. Pour the syrup into bottles, let it cool down and finally add the lavender blossom as a decoration.
    Keep the syrup refrigerated.

    I'm new to using lavender, and your video has made me want to learn even more. Could you please answer a couple of questions for me? 1. What was the drink at the end of your video? 2. What things do you use Lavender syrup for? 3. Can this recipe be made with dried flowers? I have 2 pounds of organic lavender (Whole Flowers) that a friend gave to me. So I know I can make lavender jelly with the dried flowers, but am not sure if I can substitute them in this recipe. Thank you again for your inspiration. I don't usually watch videos that don't have the person actually talking. So that should tell you how much I loved your video. LOL. Thank you again.

      hi, i can't answer the 1. question, but here are the others:)
      2. you can use it for several things - add it to your oatmeal, pancakes, cakes, waffles etc., mix it with soda (ice,lemon) and have refreshing drink,add it to your coffee or drinks of your choice, just google it and there is plenty of options😊
      3. yes you can definitely use dried ones, they just have to be edible:)

    Can I omit the Citric Acid? Or is it only necessary if I am keeping the syrup for a long time?

      Hello! It's not only used as a conservant, but it also helps to adjust the taste of the syrup, so I'd not recommend omiting it.

    This is a very large recipe. What if I just have a small amount of lavender? 28 grams or so.

    Isn't lavender toxic to cats if it is good thing your cat didn't eat it and did eat some catnip instead

      its a syrup. most standard syrups are 1part liquid : 1 part sugar. some are even 2:1. you don't drink it straight. its for mixing. If you are avoiding sugar then just make a tea.
