She might have to do a little leg work to build it up though, but think about it. She could offer to elderly but formerly very powerful characters a gift to making them young again in exchange for keeping them perpetually in the prime of their life age-wise. Once she has a huge army of these types she would be ferociously guarded by them since if Bonnie were to be taken out it would mean the end of their gift of youth from her. Maybe her abilities have limitations that would prevent this, but perhaps these limits would be lessened in a more powerful user.

Mochi fruit is not weak. You deliberately left out the fact that the Mochi fruit is a Special Paramecia, which is a paramecia that happens to have the same powers as a logia. By default and without awakened, the Mochi fruit would allow you to do all the things you said and be able to become unharmed from normal physical attacks.

Like, if there were two islands, one for logia and one for paramecia, special paramecias would be the bridge between those islands. It allows the user to control a large, sticky, edible mass. There are many abilities better than that. Katakuri elevated the fruit with his haki. The point is, if you gave the mochi fruit to a completely average person and they had to fight another average person with for example the magma fruit or the venom fruit, they would lose flat out.

Logia awakenings have not been shown yet, it is just theorized that Enel and Aramaki awakened theirs because of the transformations they seem to have.

You know the Doflamingo DF power can become same or more strong than Luffy DF power because there's called a String Theory and Oda can use it if he knew it. But I think he knew but just didn't do it instead just gave it a hint like making a Clone, Websling, and Turning the environment to String. Which that's also the reason why sewing is strong because of the String Theory. Also there's a characters in Naruto who use strings and sewing.
My theory is the hito hito no mi with a human would achieve transendance, to go beyond human limits. When you consider chopper was able to go beyond the limits of what a zoan fruit should be capable of with the extra forms it makes sense.

Wrong. It being one of the only special paramecias doesn't upscale it in power. It is just a classification. Like, if there were two islands, one for logia and one for paramecia, special paramecias would be the bridge between those islands.
It allows the user to control a large, sticky, edible mass. There are many abilities better than that. Katakuri elevated the fruit with his haki.
The point is, if you gave the mochi fruit to a completely average person and they had to fight another average person with for example the magma fruit or the venom fruit, they would lose flat out.

One can create the substance, manipulate it, control it and transform into the substance. If the opponent has no Haki/no Haki-enhanced attacks, you cannot be wounded by them. Katakuri only had to consciously avoid Luffy's attacks because he used Haki.

The user has to manually warp their body and move it out of the way for all attacks, not just haki based ones, they are still vulnerable to non-haki based attacks if the other person is faster than them. Also, the awakening it has is characteristic of a paramecia awakening where they can touch their surroundings and manipulate their surroundings as their ability. Logia awakenings have not been shown yet, it is just theorized that Enel and Aramaki awakened theirs because of the transformations they seem to have.

The fact that he can't transform automatically is just a theory from people who, for some inexplicable reason, want to disparage one of the most versatile Paramecia DF because they think they have to judge and compare its potential and "strength" with just a few pieces of information. With every DF it all depends on the creativity of its user - even magma, lightning or vibrations are nothing worth noting!

Zoans have been observed to just have their basic abilities amped up along with getting a veil over their new forms. Paramecias have been observed to manipulate their surroundings. I exclude Luffy since his ability of being cartoonish affects his surroundings anyway.
The mochi fruit is logia-like but not a logia. I am not sure if you noticed the difference but instead of his body turning into mochi on impact and spreading out like it has shown other logia users to be able to do, his body becomes mochi manually and he completely moves it out of the path of an attack. This was something he was able to do because of developing high speed and future sight.
Also, what do you mean magma, vibrations and lightning are not worth noting? The magma devil fruit was stated by Oda to have the highest offensive capabilities of any other devil fruit in the verse. The tremor fruit was stated to be able to destroy the world. Finally, the lightning fruit doesn't require much statements considering how strong Enel was portrayed despite not having any offensive haki in his arsenal. He destroyed entire islands without trying and the main reason he lost was due to Luffy's immunity to electricity.
I mentioned those things about them to say that while they are not part of any special sub category, the fruits on their own with no creativity are threats. The mochi fruit requires creativity to be a serious threat.
