You might also what to stop after 3:00 because for some if you mix it it'll go back to being liquid but at this state it's still stiff. If you are mixing it though it should be cold to retain it's shape!
Instead of boiling the milk down, just add some butter to your pastry cream (milk, sugar, cornstarch, vanilla) and I think you'll get about the same result. It's called "mousseline" cream.

Years and years ago, I put around 1/2 cup to 1 cup of milk in a container and froze it just until the milk started freezing on top but it was a little liquidy on bottom. I took it out of the freezer at that point, and whipped it up. I don’t know how long it will last whipped up because all of it was eaten immediately.
This method is used for making milk puffs in glasses....a bit of powdered cardamom is added to chilled milk...n this whole thing is beaten till froth forms .hence the name Milk puff....At the bottom of the glass only a tbsp of milk remains....In bombay ..India....we used to be woken up by the street vendor callingDoodh(milk) na Puff! And there was a scramble to have these before the puff collapsed!Sadly..these days...hardly anyone makes them.....it was whipped by hand ...as no elec beaters in those days...

Yes. Suitable for when you want something that is low-fat but has sugar added. I avoid cream as I can't tolerate much fat (normal whipping cream has less fat than double cream) but am ok with sugar. Haven't tried but it looks useful so I will some time.

It’s basically a milk ‘skin’ that’s being removed, it’s more cosmetic. It didn’t even look like much is skimmed out? It appeared the change in volume/quantity was due to the constant heating? It reduced the 4 cups down. And like distilling or evaporating, it’s the water that’s leaving not the ‘milk’. (Wouldn’t this just be similar to a can of carnation evaporated milk? Except better, since you made it yourself😉)

I think that you can reduce the water reducing part by incorporating powdered skim milk (maybe overnight) beforehand. There is a recipe online out there, which uses powder and water in a 1:1 ratio to make a whipping topping.

well i think this is a better way if you don't want all of those extra ingredients that a huge company usually use to “conserve” better the product or just to make it more “delicious”. also some ppl have allergies or intolerance to something, so maybe make it at home would help.

I don't think the powdered milk works for this particular recipe as you have to rehydrate the powder. You might have to see if someone has a recipe for it
I don't know if the condensed milk would work as I think it already has fat removed. You'd have to boil it to see if it has a fat layer on top. If it doesn't then I assume you can just add the cold condensed milk with cornstarch and sugar.

Hi, it could be due to either less fat content in the milk or you due to weak corn starch. Suggest that you let it freeze for sometime and then gently whip it again either at a very low speed or just manually by hand. This trick may help. Thanks.
Did you use powdered sugar? Powdered sugar has cornstarch in it, so really cornstarch was added in the recipe twice. This is technically whipped cream but more of a whipped pudding. Whipped cream is because the fat content is higher in the cream used, milk usually has a lower fat content. This is a novel way to introduce the air into the dairy but it won’t taste the same as whipping cream.

Hi, i started with full fat milk then evaporated it to make it further heavy. The only thing i removed was the greasy portion from the top which is just cosmetic. My milk was well evaporated and thick which is key for whipping. Also I have mentioned in response to other comments that removing Malai is not mandatory, I removed it just avoid lumps in the cream. This looks good, and I bet it tastes great, but it seems like a lot more work compared to just whipping heavy cream. Is there some special characteristics of this type of whipped cream that makes it worth the extra time, effort and pot washing? Just curious.
well i think this is a better way if you don't want all of those extra ingredients that a huge company usually use to “conserve” better the product or just to make it more “delicious”. also some ppl have allergies or intolerance to something, so maybe make it at home would help.
Whipped cream is really expensive in other countries, so this a great cheaper option! 😊

Hola! Básicamente esto es crema pastelera pero sin los huevos, no se como se le llama a esa crema allá en Argentina. Solamente busca una receta para preparar crema pastelera pero no incluyas los huevos, solo la fécula de maíz. Pero honestamente esto es mucho trabajo para hacer crema batida. Además no creo que sepa igual y la textura también va a ser diferente a la crema batida o whipped cream en inglés. Creo que es mucho más fácil comprar la crema para montar y montarla en casa, más fácil y más rápido. Espero que esto ayude!

I don't think the powdered milk works for this particular recipe as you have to rehydrate the powder. You might have to see if someone has a recipe for it
I don't know if the condensed milk would work as I think it already has fat removed. You'd have to boil it to see if it has a fat layer on top. If it doesn't then I assume you can just add the cold condensed milk with cornstarch and sugar.

When I drink hot chocolate, I always mix whole milk (about 3.3% of fat) with cream (about 40% of fat), and I normally use maybe 2 centiliters of cream for 28 centiliters of milk - this gives the milk a very full flavour, and it gives it about the same fat percentage as raw milk.

Dear Lw, the reason for removing the milk fat was to avoid lumps in the whipped cream, however its not mandatory to remove it. Mascarpone will definitely make the cream more firm, however the taste will be more cheesy. Thank you so much dear LW. 😊

Dear Ganesh, dont whip longer than 2 mins as it may turn the cream to butter. Adding corn starch again and refrigerating it will help you get thicker cream if the consistency is in the liquid form. Thank you so much dear Ganesh.

Hi, it could be due to either less fat content in the milk or you due to weak corn starch. Suggest that you let it freeze for sometime and then gently whip it again either at a very low speed or just manually by hand. This trick may help. Thanks.

Did you use powdered sugar? Powdered sugar has cornstarch in it, so really cornstarch was added in the recipe twice. This is technically whipped cream but more of a whipped pudding. Whipped cream is because the fat content is higher in the cream used, milk usually has a lower fat content. This is a novel way to introduce the air into the dairy but it won’t taste the same as whipping cream.

Hey! I'm just curious, what did you do with the malai that you collected? I didn't understand why you used full fat milk and then just remove the malai. I'm confused 😟
Hi, i started with full fat milk then evaporated it to make it further heavy. The only thing i removed was the greasy portion from the top which is just cosmetic. My milk was well evaporated and thick which is key for whipping. Also I have mentioned in response to other comments that removing Malai is not mandatory, I removed it just avoid lumps in the cream. However if you dont want to remove malai then there is no issue with that. Thanks a lot sear Yuppitty Yippity. 😊
