Funny, I had the exact same problem with a pair of Kirkland jeans from Costco. I repaired them on a Kenmore 1802.
Those Maruzen Kenmores are just fantastic. Not 'industrial,' but capable for pretty heavy domestic work. And they just get smoother and smoother as time goes by.
My jaw dropped when you pulled out the flat table... so obvious now that I see it. Briljant!

In jeans I always thought the lap seam on the inseam is for durability where your inseam is while you're riding your horse or sitting on your motorcycle, it's also where the denim of the legs swish and hit each other as you walk, etc..

The chain stitched outer seam on jeans is by design to allow quick un-stitching and re-stitching of the leg in order to gain better access for repairs with a flat bed or domestic sewing machine.

Yes.... Postbed + double neelde + split needle bar + your genius insert appears to be the swiss army knife sewing machine for most typical applications.
I'm sure leather workers doing garments, saddlework, holsters, etc. get great mileage out of the cylinder arms.
but they fail miserably as soon as you start doing serious upholstered leather furniture, and especially with more complicated stuff like slipcovered or pull over style 1-piece upholstered sofa frames. Serious leather upholstery, both in upholstered furniture and like volume manufacturing for automotive seating subcontractors for luxury cars, Postbeds are king.

Is it bad practice to run a 2 needle machine with one needle only? Will it break the machine? How about running single on occasion?
I don't think it would hurt the machine, go ahead, it should be fine.

I was looking into purchasing a cylinder machine. How does
this differ from a Cylinder Machine?
The post bed is just more versatile so if you plan to do different things with it you will be happier with the post. If you plan to do a very specific operation like bag hemming and nothing else then perhaps the cylinder arm form may be better. Versatility is what I am emphasizing here.
It’s a beautiful machine but also 3 to 4 grand.
Nice tools cost real money, man. Doesn't much matter what the trade is, either: top-of-the line tools that you can use for hours and hours every day are just floopin' expensive.
The prize is a small problem for me, but I do wish I had one. :-)
