If you guys notice, when Itachi use first Amaterasu to Sasuke, he stop the black flames before Sasuke get caught. Of course, he didn't mean to kill Sasuke.
He would have roasted him, eyes and all. Second time he just got his wing and lower half. I'm still convinced that Kishimoto rewrote Itachi's character right at the end of this battle, he was genuinely surprised by that substitution. Which means he meant to bbq Sasuke halfway to death with that Amaterasu.

its funny how every reactor I have watched forgets that Itachi used Amaterasu once in original Naruto
