    This method is very different than the traditional Indian one in which they make "curd" first (from the heavy cream/malaai). Then *churn the curd* to separate butter from buttermilk. & lastly make the ghee from butter.
    Hebbar directly *churned the malaai* (heavy cream). That buttermilk won't be tangy at all.

    I made ghee yesterday. There is one more thing you can get from it and that is sweet. After making ghee, the remaining brownish substance should be separated and added with some jaggery powder in it. try it

    Mam, I am from India.....if you add 1/2 tbsp of salt in melted butter while boiling to make ghee , the ghee will form semolina (rava)......means that it will be "kanidaar".....such ghee is very tasty and useful for health.....please try once.....

    While making ghee my mom add Fenugreek seeds in it then it turns aromatic plus it becomes more delicious and it's shelf life also increases ...

      Butter is ideally and traditionally made from cream of whole milk not from curd. Put lots of whole cream(stored and freezed) in mixie and mix it..the butter will separate on top..rest liquid u boil and eventually ghee will seperate leaving brown residue which can be used to make sweets.

    The end result here is clarified butter but not ghee. To make ghee, you need to culture the cream by adding curd to it, leaving it to culture for atleast a day, and then proceed to churn it to separate the butter from chaas.

    Boiling ghee should never put in a glass container..it will break..my own experience

    I think butter should be folded or must be pressed for some more time to give it an even better taste. And also while making ghee it is not a must that we should stir it for many times. Good video

      Real butter milk is when the butter is completely separated that's called butter milk which is shown by hebbar's kitchen is absolute buttermilk. Most of us are unaware of how real butter milk looks.. You didn't miss anything you just don't know that the left over milk is the real butter milk or Chachch in hindi... ☺

      Varshini Bharadwaj yes that’s what I meant. The buttermilk is sour. We need to curdle the cream before churning it to get buttermilk. Sometimes people boil fresh cream without curdling to make ghee but that doesn’t give buttermilk. Yes probably a couple of steps are missed.

    But, without curdling the cream, how could she make buttermilk? Buttermilk or chaas is extracted from curd and ghee/butter extracted from curd is called as shudh desi ghee and is beneficial for health. Ghee extracted directly from cream without curdling is not considered good for health.

      When you whip too much it naturally curdles. That why when whipping fresh cream for cake they tell you not over whip it or it curdles.

      It's buttermilk... whey that has come off the butter making process. you're also correct it's not cultured buttermilk.

    You reminded me of my late grandmom, she used to make butter, keep a small qty aside to offer to her Laddu Gopal, and then she would make ghee from the rest

      Exactly my granny also does the same keeping aside some butter to Krishna and after making Ghee first thing is she used to light up the diya using that Ghee

      @@chandanapandith3119 Yes, we wouldn't have to buy ghee for any reason. And we would also have fresh butter for our parathas. She would make the best aloo parathas in the world, and going to India meant aloo parathas with butter in the morning. The way to anyone's heart is through their stomach, so my granny always fed family and guests very sumptuously. I miss her dearly, and I hope she's proud that I have mastered making raw mango pickle.

    In Mali, we process the same way to get butter and Ghee (we call it sirimeh). We don't use the butter milk. The world is so small

      Same here ...My mother makes by whipping curd made from pure cream. This video has a different ingredient. Need an expert opinion on this.

      @ priya what you are referring to is certainly what many folks in India still practice. It is a different way of making butter and ghee. Many in the western world are now embracing that technique since it is about fermentation. As you probably know cream is gathered each day and cultured/fermented with yogurt. When there is enough it is churned resulting in cultured butter and a yogurt based lassi/chaas. Nothing wrong with either methods of extracting butter and or ghee.

    My mother makes it from milk. Pure milk has a thick layer of cream on it. She accumulates it for over a week and prepares ghee from it

    Can u suggest the brands of cream i can use? (As the only supply i get in the market is of amul fresh cream, but i don't think so the fat content is not that much.)
