    My grandfather is Kurdish from northern Iraq. He lives to be 100 years old. He was very healthy and used to walk to his job every day. He used to DRINK ghee eveyday. All our meals were cooked with ghee while other people in the 1970s were using vegetable oils and vegetable butter and fat. He also used to eat a lot of pomegranate

    I use a trick to take the highest amount of cream from the milk is:
    When once the milk is boiled and cooled I keep in refrigerator for few hours it helps to increase the quantity of cream.

Until recently i had no idea that our traditional ghee is made from ‘cultured butter’ or curd and not just the plain butter that we get in the store. In Karnataka we take out the Malai from the curd & store it in the fridge . Then we put the cold malai in the mixie jar, whip it to get butter. We also add a little salt to the ghee & put 2 or 3 red chillies to the ghee while turning off the GAS at the end. The ghee looks lovely light orange & with salt it tastes good. Any way , I now came to know other method of making butter. Thank you for your recipe.

    I have made butter with milk that comes in packets ( pasteurised). When I blend it the butter does not separate from milk solids no matter how much ice is added. Finally I churn it with a traditional wooden buttermilk stick to extract the butter.

    I had learned that process from my mom but as the way you rinse the butter for five times by water and then used a thick iron karai to extract ghee are the both things I did not know before . Thank you sister Nisha for improving my knowledge .

    Hello Ma'am.. Thanks for this recipe. It helped me a lot and I have been making ghee for more than 6 months now. However for the last two times, the cream is just not turning into butter. Instead it turns into a milk like solution with no butter solids visible. Can you help me and tell me what the problem could be?

      Hi. I faced the same issue several times. Then with a simple trick from my mom, I have made perfect ghee always.
      Once you have blended it with the ice cubes or cold water, just pour it out into a bowl and whip it all once again for a few more mins using a wooden spoon or spatula. This has always helped me to get the butter separated out from the milk. Hope it helps you too.

    can we use this buttermilk for baking purpose? if so, how many days can we keep this in fridge? if I'm not adding curd, will the buttermilk serve the purpose?

    • @skinnyrecipes
      @skinnyrecipes  7 лет назад +2

      Yes, you can use it for baking, for kneading dough for roti/poori. If using instead of curd....remember curd is thicker so consistency matters...otherwise it is okay. Hope this helps you, Indu.

      Skinny Recipes thank you for it valuable reply. a small clarification: if I'm not adding curd to the cream for making ghee, can we use that buttermilk for baking... it won't be sour, right?

    • @skinnyrecipes
      @skinnyrecipes  7 лет назад +3

      you need to add curd to make ghee (to get the benefits of ghee). sourness of buttermilk depends on the starter curd you use.

    Hi ... I tried your homemade desi ghee.. it came out well. Because I was trying this for the first time , I made with very small amount of milk cream. Only step I altered was that I added 2 table spoon on curd in the container and then started collecting cream in that container . So I skipped the step of adding curd at the later stage . Rest I followed your recipe . Thanks a lot !! I
