We make our own. A really good tip about the bag over the grinder. Pro TIp: You look like a goof but wear swimming goggles to prevent the sting when doing big batches.
The first time I made horseradish was with my Grandma, Grandad had grown it and she says, come help me peel this. She was giggling!! I was there ten minutes tops before I had to run out into the garden, my eyes hurt so bad!! I was 10 years old. Grandma? Didn't bat an eyelid! She was there running it through her mincer, like it was nothing, my eyes were sore for days. The next year I turned up with a scuba mask and helped her, she laughed for days, but for me? No more sore eyes lol Great to see you guys making it!
Mom planted some horseradish when we were kids, it came back for years, was just about impossible to kill. remember her making root beer. boy it was good. heard several bottles pop on the shelf. She did a lot of canning and freezing of all foods. thanks for the memories mom! I miss you.

Here, near St. Louis Missouri, is St. Clair County Illinois. Some people claim more horseradish is grown in that county than anywhere else in the world. Except for last year, because of COVID, there has been a horseradish festival over there, each year. A couple farms in the are probably harvest over 400 acres in just a few weeks. It is their primary crop. At harvest time locals actually do this process you are doing for visitors to watch. I have been told there is no fresh horseradish like that which was dug the day before.
Peanut meal in some grain feed smells so good that it will make you hungry if you love peanut butter lol. Something else cows love are pears. Had a tree in the front yard of a house I lived in. Every morning I would pick up the fallen pears and feed them to the cows on the rented pasture. They would come get it out of your hand.
Growing up on a dairy farm I had to grind feed every other day with that same feed grinder. Well probably an older model but they sound the same when your dumping corn and oats into it. We unloaded into the back of an augured feed wagon to top off the silage or green cut forage. Didn't add the molasses until the end as it all mixed together in the feed wagon before dumping into the feed trough. Watching your operation this summer has brought back great memories of farm life. Guys, just light a couple candles.. Just like Onions, the flame should consume a good portion of the fumes coming from the Radish and save your eyes from leaking for hours on-end.

The fumes emitted from the vegetable itself are what's causing the irritation to your eyes and they are in fact, relatively quite flammable in the sense that they will be immediately consumed by the flame as a fuel source in tandem with Oxygen. Go light a tea-candle next to some onions and cut them, you won't even notice the fumes!

If Horse Radish doesn't burn and hurt when you eat it, it's no good. The good stuff hurts so bad that you have to stop eating, let the pain pass and blow your nose before you can continue!
My grandparents made horseradish so hot and pungent that it was used for two reasons. Eating and clearing up sinus congestion(you could get within 5 feet and the nose and eyes would start watering).
Growing up in Northeast Philly there was Normandy square mart and a meat store in it that ground fresh horseradish there and it would make you cry as you walked by and it was good stuff

Fun fact--Horseradish derives its heat from allyl isothiocyanate, which is different than pepper heat. Peppers derive their heat from capsaicin. Another good video.
Apparently the longer it is left ground up without vinegar the hotter it gets. If the vinegar is added quickly the horseradish is milder. Intriguing. If I can find horseradish root I'll make some small jars of it and give them to my kids for Christmas. One of them makes chile pepper sauce so it's not as if we have no tradition of trying to burn each other.

First thing my Granpa taught me about horseradish was you can only harvest it in a month that ends in an r, hence September thru December. Oh btw Granpa always peeled it too.👍

Scraping the skin off is how it's done..you guys are tough, we always do it outside, because its not bearable inside. I'm from Germany and we eat it with boiled beef roast, boiled potatoes, and prepare a kind of horseradish gravy, very delicious. We have several recipes on how to use Horeseradish. One of the recipes is whole eggs (peeled) served with the HR gravy. Really good. You need to cook it for a while then the heat almost disappears. My mom use to grind it up outdoors before going to church, then cook it while we were at church then by the time we'd come back it was bearable. You are right, its a dying food source and way of life, most have no idea what it even is. I grow it in my garden. These DC wussies would die cleaning and processing it!
If you are adding vinegar, I would suggest you add it before grinding. In fact let the cut portions sit in the vinegar selection for some time. It will grind easier and faster.

In a Slovak tradition the Easter meal consists of cwikla that is actually red beets ground after being cooked and a little horseradish is put in.

Horseradish is staple condiment in Yorkshire, with roast beef, and Yorkshire Puddings, but I love it mixed in mashed potatoes best 😘
