    Hopefully you added the tri tip juice from the the bag to that ju. I have some tri-tip steaks dry brining right now. I'm torn between this and Philly cheesesteaks.

    James…is it best to bring your Sous vide to temp before adding your protein? Not only this recipe but any recipe?
