I work in a High School Cafeteria and we recently upgraded to a Combi oven and within the first cook cycle the oven set off the fire detector because of all the heat and steam it produces. Turns out our make up air unit was broken. Fixed it and now everything works as it should. So depending on your situation and future situation you might.
