I am involved in induction melting of precious metals as well and love to see this technology being used in the recycling industy.
For jewellary they would normally pour anode plates to be electro-refined into 99.99% pure cathode plate, which is then melted to produce the bullion from which new jewellary is made.
Love the use of graphite in the moulds - much longer life and no issues with bar removal.

It looked like, from one brief glance in one scene, that they are using AR for separation/precipitation.
And some of the bars were marked 99.5, which you MIGHT be able to get from AR purification, maybe done twice with different precipitation methods.

My question is, pouring from those crucibles by hand how do they insure the exact weight those gold bars are supposed to be? Is there a subsequent process to trim or add more gold to have an exactitude of the weight? Seems like a potentially fallible process. I had imagined that now there would be a mechanized system for doing this and it wouldn't be by hand. How much currency in gold are they paying these techs to make gold bars that is lost every time they do a gold meltdown?

Most scrap gold like that has already been picked over. That's the eight to twelve carat that was worth it's gold content.
As far as I know, there is no 8K gold sold anywhere in the world. I don't think even 9K is sold in the US, but I may be wrong. Most common in the US are 10K, 12K and 14K, with some small amount of higher end jewelry being 18K.

I'm going to pour me a ounce soon as my back heals. What sucks is if you do it right get 24k pure bar you still have to send it to a refiner to get it melted poured and an assy then they will give you an offer which is better than any scrap offer you will get. Several hundred dollars more so it's worth it to me.

How do they purify it?
Gold is already pure. Now if your talking about impurities, dirt dust and debris is typically burned off. But most gold is mined as gold flake or dust not as nuggets.

Except no native gold is pure, regardless of whether it is in flake, dust or nugget form. Native purity generally varies from about 16K to maybe 22K.
Only some impurities can be burned off. Other have to be removed by other methods, such as dipping off dross after fluxing, electrolysis in an gold cell or by acid/cyanide dissolution.
To get 99.999% gold, it would have to go through an electrolysis process.
