Great looking! My son and or making one also! I'm using a rocket mass heater in mine!! We'll be putting the stuff out of a camper, electric and water and inverter
@Forest brothers don't forget your air in and out! Set it up like a root cellar! Your out air should be run to one of those storage tote set at ground level! With furnace filters and crushed charcoal will filter your out air! No smell out side! I've thought this threw! Twice!

you have mudhole building down to a fine art
Yeah, i think dugouts are fine... IF...
You dig into the side of a hill, and have a somewhat raised floor. Hillside is important so water can drain away on one side.
Digging straight down, you get a foxhole. Or mud factory.
Even with the tarps all the way to the bottom of the walls, water will come up under. Just remember water follows the most available path of least resistance.
Good effort though. Maybe you can create a trench to lead away the water to a lower point. But i don't know the terrain, so not sure that's possible.
Don't mean to poke holes, just trying to offer constructive criticism.
