Yes, you can use any size yarn and any size hook, Just begin with that foundation chain, and work according to your measurements.

Bernat Softee Chunky yarn or Bernat Premium yarn
34 inch chest, 28” long: ww, 2strands 7 balls Bernat Premium; (VEST: 1680 YDS; with SLEEVES: 2400 YDS (total))
MED: ww (2 strands =7 BALLS Bernat Premium): 28” long; VEST: 1720 yds; with SLEEVES: 2500 yds
L: 48” CHEST: ww (2 strands = 7 BALLS Bernat Premium)
(VEST: no sleeves: 1760 yds, with SLEEVES: 2600 yds (total)
60 INCH CHEST: ww (2 strands: 8 BALLS): VEST: 1820 YDS, WITH SLEEVES: 2900 YDS
(NOTE: Each row for a 30 inch long vest/sweater = 12 yards chunky yarn, or 24 yds ww (worked 2 strands)

Worked sideways, with 2 strands ww yarn OR
1 strand chunky yarn
Make 3 sections: 1 back and 2 fronts
My focus is always to design a pattern that is
constructed in the easiest way possible.
1. Start with a foundation chain that is as long as your
desired vest, from shoulder to hem.
(Example:
For a 28 inch long sweater, chain 56;
for a 30 inch long sweater: chain 60;
for a 34 inch sweater: chain 68;
(multiples of 2 stitches per inch for any size)
2. Single crochet in the 4th stitch from the hook, *chain 1,
skip the next stitch, single crochet in the next stitch,
repeat from* across the row.
3. Chain 2 and turn, (counts as a sc and a ch 1)
*single crochet in the next chain 1 space, chain 1,
repeat from * across the row,.
4. Repeat step 3 until the work measures:
Front sections: 1/4 the chest measurement plus 1 inch extra;
Back section: 1/2 the chest measurement plus 2 inches.
(For example:
34 inch chest: Back: 18 inches, fronts: 9 inches each
40 inch chest: Back: 22 inches, fronts: 11 inches each
60 inch chest: Back: 32 inches, fronts: 16 inches each
Attach together at the shoulders: line up at the outside edges of the shoulders and only sew 1/3 on each side, leaving the center not attached, (this will form lapels on the front).
If making a vest, sew the side seams leaving openings to your size for the arm openings..
(Optional: leave slits at the bottom seams.) (If adding sleeves, side seams will be sewn
after attaching the sleeves.)
BELT:
Work a foundation chain that is your waist measurement plus 24 inches.
Single crochet in the 4th stitch from the hook,
*chain 1, skip the next stitch, single crochet in the next stitch, repeat from * across the
row. For smaller sizes, fasten off, (for larger sizes work one more row for a wider
belt). Weave yarn ends into the finished work.
TO MAKE SLEEVES: (Worked sideways).
Work a foundation chain that is the length desired for
your sleeves from underarm to wrist. Work step 2 then repeat step 3 until the
work is wide enough to wrap around the largest part of
your arms. Fasten off, sew onto the vest
Sew the underarm and side seams.

On the yardage. Is that 2600 total to double strand the project or 2600 for each color strand
It's the total with 2 strands (1 strand of chunky will be 1/2 that amount.)
