My friends! Below you will find a modern translation of this 200 year old recipe, the original of which can be seen at the end of the video. Thank you for watching and see you again soon! 🥰 Chicken Pudding, 1824 (really, this is essentially a quiche) 4 eggs 2 cups of milk 3 heaping tablespoons of flour 1/2 cup of melted butter 2 cornish hens A bundle of fresh thyme & parsley Salt & pepper to taste Remove the skin and quarter up 2 cornish hens. Put into a deep pot and cover with water. Add salt and a bundle of thyme and parsley tied up. I added black pepper at this stage too but only because I adore black pepper. Boil till 3/4 of the way done. Once done drain the chicken and herbs from the water and set aside to cool. Now in a large bowl whisk up your eggs till bubbly. In another bowl whisk together some warm milk with flour until well incorperated. Combine the milk and flour with the whisked eggs. Add also your melted butter and stir up well. Now that your chicken has cooled shread it up well, including the herbs, and add it to the above prepared batter. Give it another stir with some salt & pepper to taste before pouring into a deep pie dish (you do not need to butter the plate). Bake in a 350 degree oven for 50-60 minutes.
My grandmother was born in very early 1900 but they lived in a very secluded place (an island) where this 1800’s life style was very akin to theirs. Yummy! I knew you would love it! I made a version of this years ago. I had read it was a favorite of Thomas Jefferson, so as a good Virginia wife I had to try it. In Martha Jefferson's version, the chicken isn't shredded. Instead, the cut up pieces of chicken are placed in the baking dish and the Yorkshire pudding batter is poured over them. The Yorkshire pudd puffed nice and high! It was delicious, but after I said never again! There were So. Many. Dirty. Dishes.
My neighbors just bought a whole lot of laying hens because they want to teach their children about farm life. He told us that they will have more eggs than they can eat so they are giving us free eggs. How about that? Thank you for sharing your wonderful receipts with us.

I’m such a klutz that the house would be on fire! Coals everywhere 😂! I make this “crust less quiche” adding veggies. Small chopped tomatoes, green onion, even mushrooms. Super yummy! ❤🥕🐇

There is white pudding and a black pudding (blood sausage). Although the black pudding is an acquired taste, I like them both as breakfast foods. They're flavored with onions, herbs, and cloves and other spices. They're great with fresh sliced tomatoes and/or mustard!
