You work 18 hours, grocery shop, walk almost 2 miles and actually cook a meal. Me, I worked about 8 hrs at a desk job, did a few simple things around the house, ate cheerios for dinner and watched all your videos 😂. I’m a little older (55) and need my sleep but seriously. Although you cook way more than I do, we have a similar style of sort of just making things up. I’m getting some new ideas from you - I love mushrooms!

Just a tip 🙂 put the lid on your potted water to bring it to a boil so much faster 🙂 will save you a little bit of the gas on your stove I do it all the time. Love your videos you are inspiring. Thank you 😁
One of the things I like about your van is that the bed is right behind the driver's seat. Some of the elevated beds in the back of van conversions look nice and practical, because you can store things under them, but in an emergency I would like to know I'm sleeping right behind the driver's seat and could jump up quickly and take off if I needed to. I could also hear better if somebody was tampering with the doors or windows near the front. I like that you also have that extra lock on the door of your bathroom, in the event anybody penetrates the back of the van. Seems like you have a safer layout than most others. While we often see photos of van conversions with with the back door of the van open to a view of an ocean, lake or mountains, and the van owner lounging on the bed right next the open back door, in reality there are not many places it would even be safe to do that, anyway, even if such a view were nearby.
Yes, spinach and some cherry tomatoes would set that pasta off right! Can we get a van tour? I always like to see the setup of the vans. I’ve been binge watch your videos… and I subscribed! Been thinking about getting me a van. Thx 4 sharing!!
"We have to stop meeting like this." That was so classic! Thank you. That was my best laugh all day. I believe the more fresh, in its own skin/wrapper food one eats, the healthier they will be. As long as you get that fresh food and eat it within the 1st 3 days of getting it. I tend to overbuy that I don't eat at all up within 3 to 5 days and end up throwing at least 1/3, 1/4 of it away. I'm trying to get better at it though. 18+ work hrs. Be careful. Remember balance is key. Do you mind if I ask you what kind of work you're doing? Oh yes! Dinner looked good btw. Keri Golds is the s**t! I've used it to make ghee and it's incredible. Just super clean. The only channel related to people living in a van that I watch besides this one is Foresty Forest, and he is completely unique (like this channel) and has a different lifestyle going. Your channel is awesome. So the binge-watch continues!

New follower. Good for you planning and purchasing the RIGHT vehicle upfront. Plus, you are organized too. On rainy days you can get your walk in, early in the morning by Mall walking before the mall opens (in some areas). 👍🏽👍🏽👍🏽👍🏽❗ P.S. I lost a wee bit over 50lbs. by making small changes. One of them was when making pasta, rice or potato dishes use half the pasta serving and add veggies such as cauliflower, brussel sprouts, mushrooms to the dish instead.
Just cause it might rain is no reason to not work out lil lady , they make waterproof gear for a reason. Walk or run in the rain is surprisingly refreshing
I don't know, maybe I missed it because I didn't hear her make an excuse. Actually, I heard just the opposite when she came out of the store & said "...we going to try". And BTW...Everybody doesn't enjoy being in the rain to exercise or anything more than from car to door. So that's a personal choice not to be made by anyone but the person themself.
I am with you girl on the Kerrygold. I tried the butter about a year ago and have never looked back. Love watching you cooking. My oldest niece just bought a Class C fan since she works remote. Hope she enjoys it as much as you seem to.

I used to love Kerry Gold garlic and herb better before I became vegan. That's awesome that you are incorporating more plant based options. I definitely was thinking spinach in that would be great, or even chopped kale since it's a bit heartier than spinach and would add a bit of crunch with the soft noodles and shrimp.
Bok choy, Napa cabbage and water chestnuts as well as mushrooms go well with those ingredients. You might also do a low country foil pack with seafood, corn, potatoes, bell pepper and onions with ole bay seasoning

It absolutely is terribly contagious! It swept through my business and then a lot of family members too. I ran fever for 2-1/2 weeks. I’m still not totally over it yet. It’s been just over 3 weeks now. I have watched so much RUclips! 😆
You can always saute your shrimp with pork or beef sausage, stir in some chicken broth, add a few bay leaves for taste, stewed tomatoes, onions, peppers, okra, a bit of rice or couscous, and voila - nice semi-cajun stew to last a few days in case you don't feel like cooking every day... It's cool that you're maintaining some semblance of a normal life, while living in your van... Cheers and be careful!
I can't believe how much room is in your Kroger store. Mine stays full of merchandise in the isles and they are tiny. Plus add people and it gets me a little overwhelmed. I love watching your videos btw.
wow i'm at the same point in my life too. introducing more plant based diet, cutting out meat (i dont do beef just turkey/chicken), cutting down/out dairy, get in the exercise and settle my nerves. best of luck to you! you'll get there for sure

A delicious shrimp Alfredo pasta! We eat Kerrygold grass-fed butter and the Natural aged Cheddar block cheese (delicious). We try to keep a healthy life style meal planning. I really liked Kroger and shop there while visiting our daughter & grandsons (originally from San Antonio, now live in Rio Grande Valley in SoTexas). I shop at H‑E‑B and Sprouts Market here. I am new to this channel. But, I have really enjoyed everything I have seen. The one thing about I noticed is that you need more rest. It does a body good, like the milk commercials used to say. The set up of your van is so open. I like that.
I don’t eat shrimp anymore but back in the day I was taught to cook it a much shorter time, like 2 minutes per side max. Cook shrimp first then heat sauce and pour over.
I love your videos..I myself am also an introvert..I used to think something was wrong with me as a person, that I was weird but I realized I'm just better alone and that's ok! I'm so glad I found your channel! But uhhh...deets on the shirt please!! Love it!
Love the cooking. Possible tip: preseason tofu, chicken and shrimp and store so it’s marinating while you drive. When you get to your destination you pull out your preseasoned proteins and cook em up. Infused with taste and so juicy!

Use an electric kettle to boil and pour it into the pot to use propane to cook.

Sometimes when I make Alfredo from a jar, I keep a little pasta water. I put it in and shake it up to get all the sauce out.Just a thought.

I'm an RN...our hospital is filling up again with Covid patients...so far not as bad as before but here they come.

wow i'm at the same point in my life too. introducing more plant based diet, cutting out meat (i dont do beef just turkey/chicken), cutting down/out dairy, get in the exercise and settle my nerves. best of luck to you! you'll get there for sure

A delicious shrimp Alfredo pasta! We eat Kerrygold grass-fed butter and the Natural aged Cheddar block cheese (delicious). We try to keep a healthy life style meal planning. I really liked Kroger and shop there while visiting our daughter & grandsons (originally from San Antonio, now live in Rio Grande Valley in SoTexas). I shop at H‑E‑B and Sprouts Market here. I am new to this channel. But, I have really enjoyed everything I have seen. The one thing about I noticed is that you need more rest. It does a body good, like the milk commercials used to say. The set up of your van is so open. I like that.

I don’t eat shrimp anymore but back in the day I was taught to cook it a much shorter time, like 2 minutes per side max. Cook shrimp first then heat sauce and pour over.

Love the cooking. Possible tip: preseason tofu, chicken and shrimp and store so it’s marinating while you drive. When you get to your destination you pull out your preseasoned proteins and cook em up. Infused with taste and so juicy!
