    Hi Tatyana... So I made this cake today and OMG smells great. I did exactly like you did, I let it cool completely.. but then when I was unrolling to frost the cake it was tearing on the folds. I frosted it and added the sliced bananas, carefully rolled it then frosted the outside. It'll BE GONE QUICK!!!! Great recipe... Thanks for sharing it....

      Hi! I'm so glad you were able to enjoy the cake even with the layer breaking! The cake is just so fragile, I've had that happen to me, too. You can make this a stacked cake, too - use 2 or 3 8-inch cake pans :)

    That’s looks good. I actually lost my appetite for bananas a long time ago, but this recipe would probably decrease that when I try this. I just like this already, even though I lost my taste for bananas.

      Hi! I'm so glad to hear that! :) I'm guessing you are referring to making a stacked cake? You can use 3, 8-inch cake pans or 2, 9-inch cake pans.

    This recipe is a wonderful way to use those last couple of bananas that are just sitting on my counter.
    I happen to enjoy cream cheese frosting so that's another plus for me with this banana cake.....LOL!

      Cream cheese is a more tangy version of mascarpone. You can use either one for this recipe :)

    That looks like a winner to me! So, I'm confused on one thing -- did you use a "Jelly Roll" or a "Half-Sheet" pan? You say Jelly Roll pan in the video but listed a Half-Sheet pan in the printed recipe.

      It's essentially the same thing, I think lol! :) Just use a pan that size - 13x18 inches

    Can we use walnut or any other nut instead of pechan. Secondly u have not folded the pechan into dry flour. Still they are equally settled in the cake layer. Y people use that n does it effect s the flavour. Is it essential to use butter only or any other option they can avail n great the superb taste because butter has more cholesterol. N some people dust flour in the cake pan n tap it in the inverted position in order to tap flour out of the pan instead of using butter paper. We can melt butter into microwave rather than thawing it naturally at room temperature. So can we do that instead?I love it when u say time to dig in. Yummy. Pecans n banana go together really good.

      Yes, walnut will work well, too. There is no need to toss it in flour, that's usually reserved for fruits. The flour coats the berries and then thickens the berry juices as they are released and it also helps suspend them in the batter.
      I recommend staying with butter. It does have more natural cholestrol but it's a natural product that isn't made with chemicals.
      For sponge cakes, you do not want to introduce grease to the pan. It's a little different than a regular cake. I always leave the sides ungreased and use parchment paper. This way, the sponge cake rises much better.

      If you want to soften the butter in the microwave, that is fine but do not melt it. I would place the butter into the microwave for 15 second intervals - heat 15 seconds, rotate the butter, heat again and only do this a few times. You need the butter soft, not melted.

      Hi! I think if the batter is too thin, it will rise wide instead of high. I would try adding more flour to the recipes you already have and see if that makes a difference. Don't mix the flour more, just add more :)

      Not really, it's just a slight touch of lemon juice to keep the bananas from turning brown.

      For this sponge cake, there is no butter. The eggs provide all the volume so it's important to mix the eggs until they are thick, pale and super fluffy.

      Yes, you can use this recipe as a layered cake, too. I would use 2, 8-inch cake pans and don't forget to increase the baking time

    Hi! I noticed the instructions for the cream cheese frosting here are different from the instructions on the frosting’s video (here you started mixing butter and cream cheese together ), why? Thanks!

      Either way works well, although I do like to beat the butter by itself if I want a fluffier frosting for piping. I wasn't piping for this cake. Hope that makes sense! :)

      Hi! I haven't seen any other questions, maybe google removed them but I definitely didn't. Decreasing the butter should be okay, but not by too much. The butter is needed for consistency. I recommend sticking with the recipe as much as possible. Every ingredient plays an important role and removing one can be disastrous.

    Can cake flour be used for this? If so how much? I tried but my cake completely fell apart.. when I unrolled it. I used 125g of cake flour.

      Yes, cake flour can be used but you will have to increase the amount of flour from 1 cup to 1 cup plus 2 tablespoons.

      You can use a different frosting recipe, like my whipped cream frosting or German buttercream made from vanilla pastry cream. I have tons of different frosting recipes on my channel :)

      lol yes, it is a lot of butter :) You can cut down on the butter down to 1 cup but the cream cheese is very rich, too. I just enjoy everything in moderation
