  • Smoked pork belly burnt ends with a sweet sticky sauce.
    Apologies about the sound quality, the wind was horrendous.

    Recipe taken from Seared - Genevieve Taylor
    2 tbsp fennel seeds
    2 tbsp black pepper corns
    3 tbsp dark brown sugar
    1 - 2 tbsp smoked paprika
    1 tbsp flaked salt
    3 garlic cloves
    3 tbsp olive oil
    1.5kg rindless belly pork cut into cubes
    100ml maple syrup
    100ml of apple juice or tequila
    Toast the seeds and pepper corns first and grind down.

    Very nice. generally folk put there half moon grates the other way round. The flat of the half moon butting up against the raised nibs if the divide and conquer. Each to their own if it works for you. Were the Burnt Ends sweet at all when finished? I was feeling for you in the wind, can easily spike cooking temps, depending which way it's blowing
