New England Clam Chowder | Clam Heavy Recipe!

  • I am a clam lover and so naturally one of my favorite soups is clam chowder. I introduced it to my son and it quickly became one of his favorites as well. Below you will find the ingredients and instructions. If you don't want to make a lot, I would suggest that you cut the recipe in half. I really like this so I tend to make a lot. Enjoy!
    Ingredients:
    2 Large Russet Potatoes Chopped - $1.66
    16oz Clam Juice - $3.96
    20oz Whole Baby Clams - $3.72
    10oz Chopped Clams - $3.34
    4 Large Celery Stocks Chopped - $0.55
    32oz Heavy Cream - $1.96
    1 Large Whole Sweet Onion - $0.96
    6oz Lard - $0.66
    4 TBSP Butter - $0.44
    1oz Parsley - $0.18
    Thyme - $0.10
    Dill Weed- $0.10
    Salt
    Pepper
    2 tsp Flour
    Total: $17.63 makes 8 servings = $2.20 per serving
    Instructions:
    Over medium heat add lard to a large frying pan or cast iron. Once warm, add potatoes, onions and celery. Stir and sauté for 20 minutes. Add butter and let melt. Add clam juice, thyme, dill weed, salt, pepper and parsley. Stir together and bring to a boil. Reduce heat and simmer for 20 minutes. Make a slurry by adding 2 tsp flour to the clam juice from one of the cans of clams at room temperature. Whisk together until smooth with no clumps. Add slurry to soup. At this point you may need to transfer all ingredients to a larger pot. Add all clams. Stir together. Add cream and stir together. Bring to a quick boil stir often. Careful not to let it burn to the bottom of the pot. Once Boiling, reduce heat to low and simmer for 20 minutes. Soup will thicken as it cooks down and cools. Enjoy!

    OMG! Everybody on RUclips is a 5 star Michelin Chef! Use a bigger pot to start this chowder. A non stick stock pot or sauce pot would work well. Your skillet can hardly hold the first 4 or 5 steps! People will get scalded trying to transfer hot ingredients from one pot (or pan) to anorher!😂

    I am going to make this for dinner. I like that you cook down the potatoes and that they aren't big chunks (that's just my preference, maybe not "traditional" or everyone's cup-o-tea, but that's OK. ). I also like that you add a lot of clams - it is CLAM chowder (not potato or onion chowder)... To make it gluten-free, I think the flour may be unnecessary, the starch from the potatoes should thicken it enough. :) Thanks for the shout-out for HEB, I sure miss that store. Great job...

    I like real clam & juice. Also I like chunky soup so I don't cook my potatoes so mushy

    Odd, using lard to start off a New England Claim chowder. Salt pork or Bacon Is used traditionally. Also, you pretty much mashed your potato's which you want to avoid. You from New England?

      If there wasn't any salt pork in the freezer my mother threw bacon into a pot of boiling water, shut it off, and let it sit a while. The idea was to get rid of the "hickory smoke" or whatever flavor and scent and just end up with salted fatty pork.
      Potatoes should be in cubes or chunks.

      You ain't kidding about skimpy chowders, they are a waste of time & $.
      Im from Connecticut, & as a fellow New Englander we take our chowders serious.
      I will definitely try your wonderful fully loaded clam chowder recipe. Thank you for the upload.

    Add the spices before it starts to boil. The rising steam will ruin your spices in their containers there Einstein. Why did you waste your time in the smaller pan knowing fool well it was going to be too small? I am not a big fan of ground black pepper, except in my clam chowder. I would have added at least double what you put in. I have never tried lard, I will have to if I can find it. Will Crisco work if I can't find lard?

      The best way to add spice is to use fresh spices. My store was out of what I needed so I used some dry spices. I used two pans because the flavor using a well seasoned cast iron can not be compared using a large sauce pan. It's worth getting two dishes dirty. I'm sure you can use Crisco, never tried it before but should be alright. First choice would be to use bacon grease. Thanks for watching!

      You mean both? Will not taste right if not. Then you'd call it clam mashed potatoes like illustrated here.

      @@lodollar23 I prefer no potato’s in my clam chowder, but do like potato’s. I feel once you add the potato’s it decreases the taste of the clams. I like a lot of clams. So a happy medium is to add instant potato’s and use that as a thickener in lieu of cornstarch or flour. I do not use all of the instant potato’s, just enough to thicken it a bit. It is still soupy. Try it with veggie soup before you put it in your fairly expensive clam chowder mix.
