In Karnataka if I put two parts idli rice to one part urad. Even if I take three parts rice to one part urad , idli becomes hard ! I use udhayam brand rice and urad. I do not understand how 8:1 works ! Please clarify.
@@nimsuchi1 some things to consider, grinding using a mixy can make it hard so use a grinder, use only idli rice, let the batter ferment for 8 to 10 hours, if u r living in cold climate let it ferment longer. FYI For the ratio I mentioned only grinder must be used.

Soaking Urid dhal for 1 hour agreeable, but Idli Rice needs min 3 hours soaking time to grind smoothly, even the grinder stones doesn't run well, if rice is not soaked properly and takes more time to grind, in my 30 years experience. Anyone, any second thoughts?
Looks great but vendhayam doesn’t look like Vendhayam but looks like ULundhu when you grind it. How come 2 teaspoons of Vendhayam gives you so much output?
I tried everything the same way. Vendhayam did come out looking like Ulundhu. I used only 1 tsp vendhayam since I only used 1/2 cup Ulundhu and 4 cups rice. Great recipe! The batter and the idlis came out great!

You have to grind urad dal for at least 20 minutes. Every 5 minutes add a little water. The baytter should be fluffy. 1:4 is good for health.
