ok so i'm right up to where you start actually making the breads, and whatever else happens in this video, Duke your excitement to use your food processor is just the sweetest level of excitement ever
Truly. Find someone who looks at you the way Duke looks at his food processor. Though I was really happy that the stroking didn't extend to the blade, cause those mofos be _sharp_
Dark molasses nut bread is actually quite good, adding a little more flour until you have a thick ball to make cookies that almost have the effect of shortbread. Try it worth it
Personally, I think the comedy sketch are a lot more entertaining and I don't really cook a lot, BUT it's so enjoyable to see a video like this where the person behind the camera seem more excited and "real" since it's non-scripted. So please continue these
Loved watching Peter be so cagey with his special knowledge... and I was legit crying after you used the bottle to suck up the egg yolk. I had read about that trick often and NEVER seen anyone actually DO it.
So, the reason your Elven Bread didn't rise is because your mixed the yeast into the dough straight away. When making a yeast dough, put the yeast in warm (not hot) water with the honey and let it sit for about ten minutes to wake it up. Then add it to the dough. Otherwise, your bread will stay flat.
Or the yeast may have been dead..proofing it in the warm water with honey let's you know if its still working. I tend to do that first before measuring out the rest because I never bake as often as I think I'm going to!
The adding the sugar and warm liquid to the yeast and letting it sit to reactive is called blooming and it's not necessary to do. All it does is makes sure the yeast in alive and active before adding it to the dry ingredients and finding out later that the yeast was dead or inactive. If the yeast is alive and you add hot enough liquid but not too hot to active them and have the sugar for the yeast to eat. They will produce the gases even if it was all added in at once.
Blooming the yeast in warm water is the best way to get a uniform fluffy texture. The yeast will still activate if unbloomed but you will get larger air pockets. The reason yours didn’t rise is because you added salt too early. It needs to be shifted with the flour before it’s added to the liquid mixture.
I love the joy you got in this and that bread is a full catergory for you. Also, as somebody who loves to bake and does it daily, cream puffs can be very difficult to do, so good for you for doing it that well in so many tries.
I actually kinda want him to experiment to try and “homebrew” a dish for each race. After he gets a feel for their design, so we can see him work through a recipe and see how he sees each race.

I actually really appreciate that you're doing these recipes with very little background in baking - it really goes to show that trying complex recipes isn't as scary as it seems. Regarding the cream puffs, you did perfectly capture what it feels like to try to make the dough a first time. Until you've gotten some practice with it, it feels like a race against time. I kinda hope one of the species have macarons in the desert section. That's another one that looks intimidating, but if you approach it calmly, it almost always comes out fine.
These videos are honestly the best because I just bought the cookbook myself and it’s nice to see someone else make these and what could possibly go wrong.

This!! 🙈 Like a lot of other people I got into making sourdough bread over lockdown (edit: had to be glutenfree which further ups the difficulty score). And WOW... That's a whole other journey of bread-making madness!! Bread really is more like biology/chemistry class rather than just cooking...? And a small change in every variable can affect the final result pretty drastically. Thank goodness for bread machines 😅 Admire Duke's bravery in just jumping in!
That's why you marry someone who knows how to bake and make bread, that way even if you want to learn you have someone who already knows the methods to learn from... AND will take over whenever you reach the stage you become hopeless.

Look, I've been baking my whole life - and both my parents are good cooks and bakers with different qualities. I would NEVER attempt cream puffs or petit chou (which to me are the same category of masochism), unless I HAD to. You nailed it on the second try - that deserves a gold star!

You should combine your two video's taste tester's guesses. In more words, you should have them guess twice: once just after tasting and then give them the option to change their guess after seeing them. It's cool to see how everyone guesses based on the flavor vs the appearance. Loved both of your cooking videos so far!!
I really love this series. If you don't mind minor feedback, kneeding is a push, then fold motion with a quarter turn after each cycle. I've spent alot of time baking(4 years professionally) and I know the sorrow of seeing bread fail to rise. I wish you the best of luck if you continue baking! :)
Still surprised that I’m liking this series as much as a am. Good job making all the food stuffs. The blind taste testing ,ranking ,and trying to figure out where it comes from at the end keeps putting a smile on my face.
I remember when I made the cream puffs, we had to redo them 3 times. I ended up doubling the amount of dry ingredients because they never thickened otherwise (I don’t own a food processor so maybe that did it but still). So happy they turned out great in the end for you
I LOVE this series! As a DM and cook, I’ve been doing my own Heroes Feast cookbook trying, and having about as much fun as you guys! This is definitely a great series and I look forward to the next one

I absolutely LOVE the perseverance! Instead of giving up you're willing to try multiple times to get the right results and you can easily see how much you've improved from the first attempt to the second! Keep on keeping on, dude!

A couple os tips for any future bread baking endevors: 1 if the dough isn’t sticking to itself you can always add more milk or water(depending on what’s already in the recipe) until it is at a good consistency, 2 on the other hand if the dough is too runny add flour until it is thicker, 3 yeast has to be prepared before hand and you need to combine it with a ratio of sugar and water(it differs from company to company) then either heat up your oven and leave the yeast covered with a damp cloth and on top of the oven or set the over to a low temperature and cover it with a damp cloth in the oven for a little while, if the yeast isn’t activated and the dough is too thick it won’t rise and that’s what you need to make the bread soft on the inside and have air pockets I hope this helps anyone who may need this for bread baking
I think you did amazing! I could not get the cream puffs to work at my house, so good on you! About the Elven Bread, your yeast didn't seem to be active. When you left it to rest the first time, it should have risen some. Your dough was crumbly but should have been smooth after kneading. It's an enriched bread so it isn't easy at all and I commend you for getting it so close the first try! ETA: Also the dwarves flatbread needs to be thinner than the recipe says. When you roll it out thinner, it puffs better and is lighter so it’s not so dense and has a better texture and flavor
Watching this series inspired me to start making the Hero's Feast food too! I've made one thing from dwarves, elves and halflings, and they all turned out surprisingly well! 😂
This has got to be one of my favorite cooking videos on RUclips, watching someone who isn't a very skilled cook fumbling through recipes and making good things is just amusing and wholesome. Plus your humor is godly. Praise be the algorithm.
If you haven't yet tried it, I highly recommend making the onion soup from this cookbook! Unfortunately though, you would have to spend about 2-3 hours mostly just stirring onions and slowly caramelizing them. Another thing to keep in mind is that the recipe says "fresh thyme" and so you need much less powered thyme. After watching this video, I think that I want to tackle the elven bread next

I love watching you cook! I made these recipes last winter and have found that when cooking, start on medium to low heat to prevent burning ingredients and increase gradually. Also kneading bread should take around 5-10 minutes minimum to work the gluten. If your dough is unmanageable, cover it and refrigerate until it's firm. If you think your oven is too hot, use the rack furthest away from the coils or on the bottom rack while adjusting the heat. Trust your nose, not the timer, check on the food when it starts to smell good. Hope this helps for future vids - keep it up!
as someone who works for a bakery, I was practically yelling "noooo don't over mix! " but honestly for your first time making any type of bread, this was really good! now i want this cook book to try all the food!
Hey Duke! The cheese you were using, Gruyere, is the cheese you put on the fancy onion soups! (That's part of why it's so expensive it's snobby cheese but it tastes good)
I found this book in Barnes&Nobles, but was swiftly disappointed when I realized there was no recipe for Dream Pastries. Alas it would've been a awesome prop for running CoS.
Watching you learn to make these is such a joy. I love seeing how excited you get when it finally works! Baking is a fickle art, and I'm so glad to see you working through it despite things not turning out right the first time. Keep it up, you're doing great!

It's probably more the fact the bread was heavily over-kneaded, which made it hard for air bubbles to form.

Unfortunately though, you would have to spend about 2-3 hours mostly just stirring onions and slowly caramelizing them. Another thing to keep in mind is that the recipe says "fresh thyme" and so you need much less powered thyme. After watching this video, I think that I want to tackle the elven bread next

I love watching you cook! I made these recipes last winter and have found that when cooking, start on medium to low heat to prevent burning ingredients and increase gradually. Also kneading bread should take around 5-10 minutes minimum to work the gluten. If your dough is unmanageable, cover it and refrigerate until it's firm. If you think your oven is too hot, use the rack furthest away from the coils or on the bottom rack while adjusting the heat. Trust your nose, not the timer, check on the food when it starts to smell good. Hope this helps for future vids - keep it up!
as someone who works for a bakery, I was practically yelling "noooo don't over mix! " but honestly for your first time making any type of bread, this was really good! now i want this cook book to try all the food!
