- Ok, here is the Ester cakes scallop acrylic disk tutorial. Sorry I didn’t really trim the cake, I just reuse whatever I have in the fridge. This This is a bit long process than the round cake, be patient and don’t rush, it will be paid off when u see the finished cake
This is 6” round cake and usually trim the side of my cake a little bit, so I can get +/- 5.75” diameter (crumb coated and ready to finish)
Final coated the top perimeter and freeze till buttercream firmed up. Then clean up the top with smooth hound comb.
Move the cake from the board, with paper towel and bigger cake board, flip the cake so you can see clear when you attach the bottom part of the scallop disk Make sure is centered therefore it’s best to use clear acrylic so you can see it clearly.
Flip it back and tape it to the metal board.
You need to work fast at this stage while your buttercream still firm.
Add a bit of buttercream as a glue then attach smaller size parchment paper. Add a bit of buttercream and attach the top part of the scallop disk. Make sure is centered and align with the bottom scallop disk.
Put in the freezer about 10 mins to make sure all firm and the paper and disks not moving around.
Use piping bag with big round tip, start frosting the cake. Use smooth hound cake comb to scrape the excess buttercream. It will take a while but be patient. Once you are done scraping, clean the top perimeter and put in the freezer for about 15 to 20 mins until buttercream firmed up.
Run thin and sharp knife to release the top scallop disk.
Clean and scrape the top using smooth hound comb.
Run thin and sharp knife to release the bottom scallop disk, move the cake to the clean board.
Patch and scrape any imperfections frosting using smooth hound cake comb.
DO NOT PUSH HARD when scraping the buttercream at this stage cause it will leave indentation marks (been there done that 😆)
I use my bare hand to smooth the top of the cake, as if I use glove it will messed up the buttercream.

I have wanting to try these so glad I found your tutorial, three questions where can I buy these, what sizes do they come in and my customers only like American buttercream which we all know is thick, to make things less frustrating should I make my frosting a little thinner, your frosting looks softer.
