Explanation was good but the animation was misleading. In order to double out (or double in if playing 301) you can't win by throwing two darts at a single space, you have to land one dart in the double ring, and it needs to be the last dart. For instance if your score is 32 then you need a double 16 to check out. Hitting single 16 twice does not win. If you miss the double 16 and hit the single, you now have 16 left but you must throw at the double 8. If you miss and hit single 8 then you have 8 left and throw at the double 4, and so on. "Doubling" is not hitting a single space twice, it's hitting a double space once.

Is it imperative to use all your darts? For example, you have 40 points left and you go for a double 20 to win, but you have 2 darts left over. Do you still win with remaining darts?

This applies to doubling out as well, it's perfectly ok to win a match on a bullseye, and quite stylish too! The triple ring however, would not count. You have no obligation to throw all three darts on your last throw, if all you need is one then you're done!
