    I am so exited for Sophia's new video.
    This recipe is A-M-A-Z-I-N-G !!! Just give it a try !
    I love how Sophia brings us easy, real, accessible recipe that taste so incredible. I am just producing these videos so at the end of it I can just eat what she made ahaha !

    Polenta with Sautéed Mushrooms
    Creamy Soft Cooked Polenta
    1 cup fine-milled polenta
    1 ½ CUP stock of your choice
    4 ½ cups of water
    2 cloves smashed garlic
    ½ cup cashew milk
    ½ tsp sea salt
    Garnish: toasted pine nuts, chili oil,
    Place a dutch oven, or heavy bottom skillet over medium heat. Add stock, water, and cloves of garlic to pot. Bring to a low simmer, and then stream polenta in slowly, continuing to stir mixture. (very important not to let boil, and continue to stir, as polenta can scorch easily) Continue to stir for at least 5 minutes until mixture starts to really thicken. Bring temperature to low, and a place lid on mixture. Continue to cook for at least 15 minutes, stirring mixture every few minutes. After 15 minutes or so, add cashew milk. Taste for seasoning, add salt & pepper at your discretion
    *stop cooking at 15 minutes for a more grit/course texture
    Satuéed Mushrooms
    1 ½ cup assorted mushroom varieties, chopped
    2 tbsp. grapeseed oil
    5-6 sprigs of fresh thyme
    2 cloves garlic
    ½ tsp. sea salt
    1-2 tbsp vegan butter (or regular butter)
    1 tsp lemon zest
    Bring a heavy bottom skillet to medium high heat, add grapeseed oil. Add mushrooms, thyme. Season with sea salt generously. Sauté for 3-5 minutes, add thyme and 2 smashed cloves of garlic. Stir for another minute. Add butter to the pan, and spoon melting butter over mushrooms while cooking. Add a splash of lemon, to help scrape brown bits off pan. Check to make sure mushrooms are seasoned. Turn off heat, and add lemon zest to mushrooms.
    To serve: Place ½ cup polenta on a plate, and top with sautéed mushrooms. For texture, add toasted pine nuts, or pumpkin seeds. Finish with a touch of chili or your favorite flavored oil

    Totally agree with her take on yellow. Dont get why so many people hate it 😅. I painted the wall opossite of my bed yellow so that every morning its the first thing I see and I love to wake up to it.😂✌

    In Romania, we eat polenta almost every meal, we used instead of bread. You don't need to stir and cook that much. If you want to be thicker just add more corn flour. It will stick a little on the pan, but if you let that pan soak in water for a while will be fine. A TIP to stir polenta well and fast is to use a whisk.

    I’ve definitely grown up with ‘polenta’ in my house, but I know it as cornmeal. and my mom would always make it sweet, like a porridge. I’ve never had it savory, so I’ll definitely give this a try!

    Polenta is traditional Romanian food. I grew up there and ate lots of it, it's so yummy. I also had it with mushrooms just the way you cooked it. You don't find it often in NYC restaurants, sometimes in Italian ones. I've never seen such a runny polenta though, it's usually cooked much thicker.

      Cristina Taranu yep! You usually add dairy milk, butter, cheese, and corn flour! I cooked this one completely plant based to prove that it’s just as yummy!

    Great happy vibes! And I love polenta. We also called it grits as a kid. As a Wisconsinite, I remember eating it fondly! Haha. Also, I actually use water only when cooking my mushrooms and just add a bit of non dairy butter at the end for "silky-ness." But that's just me. :)

    here is an spiritual view:-) Yellow is also the color of the solar plexus chakra, It has a connection with the sun, fire, the energy of light, all forms of power, willpower, self-confidence..

    A staple food in Botswana 🇧🇼 that’s like polenta is called Phaleche or pap
    It’s something we eat ALL the time 😊

    Looks very nice! I am just sorry for the stems you are thowing away. They are the same material as the rest of the muchroom, they would be just as delicious, I don't even think they would disturbe the texture - we always cook those parts too, and they soften...
    Anyway I like this idea about these colours, I have been folliwing the same idea in my life :)

    "wow, I just ate polenta too...I ate the ancient harvest brand, the one that's premade. I pack the polenta like an inch thick to the bottom of the pan and poured a cup of tomato basil soup on top. Bake it for like 20 minutes and that's that...but what I did isn't "real" cooking. This recipe is right up my alley. I'm definitely gonna try it, especially since I'm already a polenta fan... and I love how its plant base that's a huge win for me. Xo Sophia_roe
