- I guys ! who’s excited for Sophia’s episode 1 of her series “ eat the rainbow”??? I know I am ! 1/ Red wine vinegar dressing :
1/2 medium size shallot, finely minced
1 garlic clove, minced or microplaned
1/4 cup red wine vinegar
1 tsp honey or maple syrup (optional)
1 tsp Dijon mustard
1/2 tsp sea salt
Black pepper to taste
1/3 cup walnut oil
Mix all ingredients together in a bowl, except walnut oil. Once ingredients are mixed, whisk in walnut oil until thoroughly emulsified
2/ Citrus Miso Dressing :
1 orange, juice only
1/2 lime, juice only
2 inch knob of ginger, microplaned or finely chooped
1 small clove of garlic
1/4 cup coconut aminos

Honestly the content you put out is amazing. Time after time I’m so impressed by how you manage to take so many aspects of health and beauty and incorporate it in such a natural way to your channel. It’s very impressive and honesty I really hope you’re proud of what you’ve achieved.

Hi! I tested the first recipe today with what I had, I used garlic, onion balsamic vinegar, honey, mustard, salt, pepper and korean sesame oil for the dressing and just one salad because I didn’t had anything else I also put some nuts, sunflower seeds, black roasted sesame seeds and actually my boyfriend wasn’t hungry but he told me “what are you cooking? it smells delicious! Can I eat with you?” He finished everything! Can’t wait to try the second one!
I've made the miso dressing and it is FANTASTIC! It's on such high rotation in my house, me and the fella love it. We've been using it as dressing and dip for veggies. Amazing with a touch of peanut butter and sesame oil (a splash of fish sauce if you're into that) for dipping salad rolls. Avocado, carrot sticks, cucumber sticks, pea shoots, red onion (anything seasonal really) and some rice paper sheets with this sauce on the side? Summer lunch sorted. 11/10.

Every time I watch a food video, I fall into two camps of thought: the "yeah right, I'd never do it that way" camp, or the "that would be nice to try someday, but probably won't" camp. I can honestly say that I truly want to try both these salad recipes! Their flavor profiles sound so delectable and unique, and the blend of vegetables sound so fresh and delicious! I also admire your different methods for bringing out the most flavor of each dish.
I am copy/pasting both of these recipes and adding a few more ingredients to my grocery list this week! Thank you for a very rewarding video!

oh and you can also use other sorts of miso too!! Adzuki bean, garbanzo bean, white bean etc!! Just in case you wanted to ever stay away from soy! It's awesome to know you have options :)
