I love to cook wholesome north Indian style recipes & usually I try tweaking these recipes to see how little changes result in different flavours & textures. This is the bhuna gravy which I prepare to make recipes like chicken bhuna masala, paneer bhuna masala, you could also add some nutri soya chunks as well. The gravy remains the same & turns out to be lipsmacking. I get a lot of requests for the soya chaap recipe, so here it is. The recipe is rustic & masaaledaar. You can reduce the ghee & the spices if you wish to make a calmer version of the recipe. I paired it with some garlic naan which tasted delicious. So a quick chat about soya chaap. The varieties available in the market which are really soft are usually made of maida which is any where between 80-95% of the chaap. Also, the ones which are available as canned or frozen ones have about 30-40% soya & 50-70% of wheat flour or maida. So choose the brand by reading the ingredients. Also, if you are looking at a complete protein replacement, then go for the soya chunks which are much healthier. You can reduce the ghee & fat of the recipe & use the chunks to make it healthier. Remove the lid and the charcoal and set aside until Chef 2 is done with the masala. You can go assist them with the ingredients! Chef 2: Ingredients: 2 tbsp ghee 1 tbsp oil 1 tsp cumin seeds 2 bay leaves 2-3 cloves 1-2 green cardamom 1-inch cinnamon stick 1 black cardamom 5-6 onions (chopped) 1 tsp turmeric powder 2-3 tbsp ginger garlic paste 3-4 slit green chillies 2 tbsp Kashmiri red chilli paste Hot water 4-5 tomatoes (coarsely pureed) 1 tbsp red chilli powder 1 tbsp coriander powder 1 tsp garam masala ½ tsp garam masala 1 tsp roasted Kasuri methi 2 tbsp coriander leaves Salt to taste Procedure: Chef 2, you’re on masala duty! Saute on flow flame for a minute. Add 5-6 chopped onions and cook on medium flame until they’re golden brown. Add 1 tsp turmeric powder, 2-3 tbsp ginger garlic paste, 3-4 slit green chillies and 2 tbsp Kashmiri red chilli paste. Mix and cook for 3-4 minutes on medium flame. Add some hot water to further cook the ingredients and prevent burning. Add 4-5 coarsely pureed tomatoes, salt, 1 tbsp red chilli powder, 1 tbsp coriander powder and 1 tsp garam masala. Mix and cook for 15-29 minutes on medium-low flame until the ghee separates from the masala. You can also add water to prevent the masala from sticking to the pan. Time to add the chaap marinated by Chef 1 to the masala! Cook on a medium flame for 4-5 minutes until the curd is cooked. Add hot water to adjust the consistency. Cook for another 4-5 minutes on medium-high flame. Add ½ tsp garam masala, 1 tsp roasted Kasuri methi, 2 tbsp coriander leaves and mix well. Hey chef! I made some variations to the recipe. Instead of deep frying the chaap before, I took some mustard oil, added Kashmiri mirch to it. Then added hung curd, a pinch of salt, ginger garlic paste and soya chaap pieces. I prepared the gravy the way you did. Before putting the marinated chaap into the gravy, I took a pan poured the mixture and cooked it for 2-3 minutes (just so that the mustard oil is cooked, along with the piece of soya chaap) The recipe turned out to be really amazing!!
