  • Full Written Recipe- Soya Chaap Bhuna Masala
    For marinating the soya chaap
    Ingredients:
    • Soya chaap 500 gm
    • Oil for frying
    • Whisked Curd 1 cup
    • Salt to taste
    • A pinch of Black pepper powder
    • Red chilli powder 1 tbsp
    • Amchur powder 1 tsp
    • Live charcoal + ghee
    Methods:
    • I have used a canned soya chaap, you can also use frozen or fresh. Follow the package instructions, usually you just require to wash them. Some of the packaged soya chaap require boiling, further cut it diagonally in 2-3 pieces, depending on how big the chaap is.
    • Set a pan or wok on medium heat, Deep fry the chaap in hot oil until golden brown in colour. Remove it and transfer it to a mixing bowl.
    • Further, add curd, red chilli powder, amchur powder, and salt & pepper to taste, mix well with the chaap and smoke it for 5-6 minutes by placing live charcoal and adding few drops of ghee & covering it.
    • Marinate it until it is added into the gravy.
    For making bhuna masala
    Ingredients:
    • Ghee 2 tbsp + oil 1 tsp
    • Jeera 1 tsp
    • Whole spices:
    1. Bay leaves 2 nos.
    2. Cloves 2-3 nos.
    3. Green cardamom 1-2 nos.
    4. Cinnamon stick 1 inch
    5. Black cardamom 1 no.
    • Onions 5-6 medium size (chopped)
    • Turmeric powder 1 tsp
    • Ginger garlic paste 3 tbsp
    • Green chillies 3-4 nos. (slit)
    • Kashmiri Red chilli paste 2 tbsp
    • Tomatoes 4-5 medium size (coarsely pureed)
    • Salt to taste
    • Powdered spices:
    1. Red chilli powder 1 tbsp
    2. Coriander powder 1 tbsp
    3. Jeera powder 1 tsp
    • Hot Water as required
    • Marinated soya chaap
    • Garam masala 1/2 tsp
    • Kasuri methi 1 tsp
    • Fresh coriander leaves 2 tbsp (chopped)
    Methods:
    • Set a pan on medium heat, add ghee & oil, add whole spices and sauté it for half a minute to a minute.
    • Add the chopped onions and cook until its golden brown. Cooking of the onion should be on medium heat.
    • Further add turmeric powder, ginger garlic paste, green chillies and red chilli paste, stir and cook until ghee separates. I usually use some hot water to further disintegrate the onion.
    • Add the tomatoes, salt to taste, red chilli powder, coriander powder and cumin powder, mix and cook for 15-20 minutes on medium low flame.
    • Add hot water if the masala starts to dry or starts to stick to the pan.
    • Lower the flame and add the marinated soya chaap, stir and mix gently, cook for 4-5 minutes.
    • Add hot water to adjust the consistency of the gravy as per your need. And simmer for 4-5 minutes.
    • Add garam masala and kasuri methi, mix well and continue to cook for 2-3 minutes.
    • Finish it by adding some freshly chopped coriander leaves.
    • Your bhuna masala soya chaap is ready, serve hot with garlic naan, or paratha or any Indian bread of your choice, you can also choose to pair it up with little rice.

    I love to cook wholesome north Indian style recipes & usually I try tweaking these recipes to see how little changes result in different flavours & textures. This is the bhuna gravy which I prepare to make recipes like chicken bhuna masala, paneer bhuna masala, you could also add some nutri soya chunks as well. The gravy remains the same & turns out to be lipsmacking.
    I get a lot of requests for the soya chaap recipe, so here it is. The recipe is rustic & masaaledaar. You can reduce the ghee & the spices if you wish to make a calmer version of the recipe. I paired it with some garlic naan which tasted delicious.
    So a quick chat about soya chaap. The varieties available in the market which are really soft are usually made of maida which is any where between 80-95% of the chaap. Also, the ones which are available as canned or frozen ones have about 30-40% soya & 50-70% of wheat flour or maida. So choose the brand by reading the ingredients. Also, if you are looking at a complete protein replacement, then go for the soya chunks which are much healthier. You can reduce the ghee & fat of the recipe & use the chunks to make it healthier. I have uploaded the recipe as nutri kulcha which can be checked on YFL’s RUclips or Facebook page.
    So enjoy this recipe guys, the choice of using chaap vs chunks is upto you. I love to have the chaap sometimes, but a chicken bhuna masala with this recipe is just marvellous. (If you want me to upload the recipe, let me know in the comments)

    If you love the sound of soya, you’ll love the sound of cooking this dish with your soyamate! We’ve split this exciting Soya Chaap Masala recipe for you and your partner to chef it up, together. Bring more to the table, with half the effort when this spicy plateful is made by two. Soya, so yum!*
    Cooking time with better half: 30-45 mins
    Chef 1:
    Ingredients:
    500 g soya chaap
    Oil
    1 cup whisked curd
    Salt to taste
    Pinch of black pepper powder
    1 tbsp red chilli powder
    1 tbsp amchur powder
    Live charcoal
    Ghee
    Procedure:
    Chef 1, you’re on chaap duty! Cut the soya chaap diagonally into 2-3 pieces, depending on the size of the chaap.
    Fry the chaap in hot oil on medium-high heat until it’s golden brown and crispy.
    Transfer the fried chaap to a bowl.
    Add 1 cup whisked curd, salt to taste, pinch of black pepper powder, 1 tbsp red chilli powder and 1 tbsp amchur powder to the chaap. Mix and coat well.
    Place live hot charcoal (in an earthen bowl) in the middle of the chaap bowl and drizzle some ghee on it.
    Cover it and leave it for 5-6 minutes. This should give it a nice, smoky flavour.
    Remove the lid and the charcoal and set aside until Chef 2 is done with the masala. You can go assist them with the ingredients!
    Chef 2:
    Ingredients:
    2 tbsp ghee
    1 tbsp oil
    1 tsp cumin seeds
    2 bay leaves
    2-3 cloves
    1-2 green cardamom
    1-inch cinnamon stick
    1 black cardamom
    5-6 onions (chopped)
    1 tsp turmeric powder
    2-3 tbsp ginger garlic paste
    3-4 slit green chillies
    2 tbsp Kashmiri red chilli paste
    Hot water
    4-5 tomatoes (coarsely pureed)
    1 tbsp red chilli powder
    1 tbsp coriander powder
    1 tsp garam masala
    ½ tsp garam masala
    1 tsp roasted Kasuri methi
    2 tbsp coriander leaves
    Salt to taste
    Procedure:
    Chef 2, you’re on masala duty! In a pan, heat 2 tbsp ghee and 1 tbsp oil. Once it's hot, add 1 tsp cumin seeds, 2 bay leaves, 2-3 cloves, 1-2 green cardamom, 1-inch cinnamon stick and 1 black cardamom. Saute on flow flame for a minute.
    Add 5-6 chopped onions and cook on medium flame until they’re golden brown.
    Add 1 tsp turmeric powder, 2-3 tbsp ginger garlic paste, 3-4 slit green chillies and 2 tbsp Kashmiri red chilli paste. Mix and cook for 3-4 minutes on medium flame.
    Add some hot water to further cook the ingredients and prevent burning.
    Add 4-5 coarsely pureed tomatoes, salt, 1 tbsp red chilli powder, 1 tbsp coriander powder and 1 tsp garam masala. Mix and cook for 15-29 minutes on medium-low flame until the ghee separates from the masala. You can also add water to prevent the masala from sticking to the pan.
    Time to add the chaap marinated by Chef 1 to the masala! Cook on a medium flame for 4-5 minutes until the curd is cooked.
    Add hot water to adjust the consistency. Cook for another 4-5 minutes on medium-high flame.
    Add ½ tsp garam masala, 1 tsp roasted Kasuri methi, 2 tbsp coriander leaves and mix well. Your soya chaap masala is ready!

    Hey chef!
    I made some variations to the recipe. Instead of deep frying the chaap before, I took some mustard oil, added Kashmiri mirch to it. Then added hung curd, a pinch of salt, ginger garlic paste and soya chaap pieces.
    I prepared the gravy the way you did. Before putting the marinated chaap into the gravy, I took a pan poured the mixture and cooked it for 2-3 minutes (just so that the mustard oil is cooked, along with the piece of soya chaap)
    The recipe turned out to be really amazing!!
