What i liked about your story about Wazwan is so true. Kashmiri cuisine does not come within mughlai cuisine. Unfortunately in Indian subcontinent anything that Muslims cook is considered to be from Mughals. Which in Kashmir's case isn't true because Kashmir had connections to central asia long before Mughals even existed. Kashmiri cuisine was inspired by that cuisine. Mughals when they came to Kashmir in 16th century actually took from Kashmir. Kashmir was already ruled by local dynasties like Shahmiris & Chaks before Mughals who patronised Central Asian & Persian culture. Therefore Kashmiri cuisine has little to do with Mughlai cuisine.

I've just cooked this. Incredible. Loved it. Thank you very much. 👍👍
Brought back memories of my hometown of Birmingham, UK, where there's a large Kashmiri community.
I didn't have all the ingredients so had to substitute veg oil for mustard oil, mixture of water and Kashmiri chilli powder for ratanjot, natural yoghurt for curd. I left out saffron and asafoetida.

there’s another recipe for mutton curry that does not use onion or garlic :-) it’s used during Kali puja in Bengal. The onion-garlic less mutton curry comes with the Goddess’s blessings and is treated as a prasad or bhog - Bengali Niramish Patha r Jhol 🙂 Back in the days, the meat of the sacrificed animal was used to prepare this curry.

The recipe itself explains how Kashmir is the land of the Kashmiri Pandits and not the invaders who's current generations are still trying to claim it!
But let's not make this about a religious fight and everyone should enjoy this dish with a regard to the Hindu king who's descendents created magic in the beautiful valley of Kashmir.
And I pray to the almighty that one day our Indian Kashmiri brothers, with our love and kind support, can proudly settle in their real homeland in Kashmir without any fear.
As Indians, we will never let our Kashmir Pandit families lose their culture, and treat it as our own heritage.
    Jai Hind!

Lovely. This is the first time I have seen a kashmiri roganjosh cooked in actual kashmiri way. Loved the way you differentiated the Muslim and pandit food. It has always been frustrating to watch kashmiri food being presented in wrong manner with ginger garlic, sweet, with cashews and raisins you didn't. Have always followed your recipes saw this first time. Wonderful
