Blackened chicken!! LOL I like the Old Bay Blackening spice, I use real butter also. Going to try your Zatarans spice when I can find it. I enjoyed it immensely, and as someone else stated I appreciate the camaraderie that you all exhibit.

I use a little single Coleman burner that screws onto the little propane bottles, with a little plastic base that the bottle sets in. Set it outside and get the cast iron pan almost white-hot. Two minutes a side and they are done. Major smoke. I'll try the Zatarain's spice, but I've been using Prudhomme's spice mix from his cookbook. Tasty!

SK, i'm behind on my video viewing. We are flooded big time and my rental property needs attention and I have an appointment Wednesday for my taxes and the Corona Virus problems are making it difficult to get things done. I do Blackened fish also. I do it a little different but everyone I know does it a little differently. Yours looked real good and judging by the looks on those guys faces they must have been. Ingredients. butter .two bell peppers .one onion . 4 sticks of celery .1 can tomato sauce. one can cream of mushroom. one and a half pounds of crappie and white rice and Creole Cajun seasoning. Start by choping bell peppers onions and celery and sauteing in a skillet with butter until the peppers and onions are soft then add the can of tomato sauce and you can add diced tomatoes if as well simmer for about 5 to 10 minutes add crappie pieces about 1 in cubes 2 sauce cook additional 3 to 5 minutes or until the crappie it's cooked then add one can of cream of mushroom seasoned to taste with Creole / Cajun seasoning heat an additional 2 to 3 minutes and serve over white rice and for the people that don't eat crappie you can substitute the crappie for shrimp chicken or sausage you're welcome

On this small electric stove I had to have the temp on high before I got the smoke but like I said it's going to be different with cast iron skillet size, heat source and filet thickness..... It's really easy without a lot of specifics....
