    Sk, my mouth was watering, and drool was running down the side of my mouth. If it was smell a vision you tube, you can smell it all the way over here. Need to do more of these catch and cook videos. Great work sk. That's what its all about. I have done the blackened and the lemon pepper also, over a bed of wild rice. With a large glass of lemonade.     Blackened chicken!! LOL I like the Old Bay Blackening spice, I use real butter also. Going to try your Zatarans spice when I can find it. I enjoyed it immensely, and as someone else stated I appreciate the camaraderie that you all exhibit.

    I use a little single Coleman burner that screws onto the little propane bottles, with a little plastic base that the bottle sets in. Set it outside and get the cast iron pan almost white-hot. Two minutes a side and they are done. Major smoke. I'll try the Zatarain's spice, but I've been using Prudhomme's spice mix from his cookbook. Tasty!

    SK, i'm behind on my video viewing. We are flooded big time and my rental property needs attention and I have an appointment Wednesday for my taxes and the Corona Virus problems are making it difficult to get things done. I do Blackened fish also. I do it a little different but everyone I know does it a little differently. Yours looked real good and judging by the looks on those guys faces they must have been. We need to do more of these kinds of videos. Thanks as always for a great video.

Ingredients. butter .two bell peppers .one onion . 4 sticks of celery .1 can tomato sauce. one can cream of mushroom. one and a half pounds of crappie and white rice and Creole Cajun seasoning. Start by choping bell peppers onions and celery and sauteing in a skillet with butter until the peppers and onions are soft then add the can of tomato sauce and you can add diced tomatoes if as well simmer for about 5 to 10 minutes add crappie pieces about 1 in cubes 2 sauce cook additional 3 to 5 minutes or until the crappie it's cooked then add one can of cream of mushroom seasoned to taste with Creole / Cajun seasoning heat an additional 2 to 3 minutes and serve over white rice and for the people that don't eat crappie you can substitute the crappie for shrimp chicken or sausage you're welcome

    I've never tried that method cooking fish. (butter in cast iron) Will have to do this for sure. I love spicy food so I may sprinkle a little hot sauce or cayenne on with the seasoning. Oh Yea!! As always, love your video's SK. Thank you sir.

      Zanterains Blackening seasoning, I zoomed in on it......I didn't discuss heat and how long as it's different with each fillet, the light smoke from the butter and the char on the fillet is what to look for.... On this small electric stove I had to have the temp on high before I got the smoke but like I said it's going to be different with cast iron skillet size, heat source and filet thickness..... It's really easy without a lot of specifics....

    We call the first one tight eyes. I live in Mississippi and we know a thing or two about crappie. When y’all get ready for a mess of slabs, come on over to Grenada or Sardis.Our reason is because it’s better eating with family and friends than in the best steakhouse in the country.

    If I see that Zatarans blackened seasoning in the store I am going to buy it. The problem is , I live in Minnesota where I never see it on the store shelves . I think it's more of a southern thing.

    $7 KNIFE...YOUR KILLING ME...that outdoor living room /dock/deck is awesome.I do notice that if I dont have my fish on the edge of table I tend to miss some of the "BACK-STRAP" if im using my electric fillet knife."IMO"... I'M GONNA WATCH AGAIN "THE FILLET TECHNIQUE" NICE VIDEO.

      I do short cuts when cutting towards my hand..... I've yet to cut myself other than poking a fin in my finger while filleting.....I do recommend wearing a glove and I should..... They're tasty like that..... Thanks!
