I also cut up celery and peppers in bags for the freezer. Plus onions too. It does help out a lot when you cook.

I freeze mushrooms. I sautée them with olive oil, salt and pepper and some fresh thyme. Then I let them cool and put them in freezer bags. They are wonderful to pull out and add to recipes. Try it! Delicious looking meals today. One of my favorite summer time meal is stuffed peppers. Blessings!

You asked for quick meal ideas for when you get home late and everyone is starving…. I know you said you don’t like crockpot meals, but it doesn’t have to be a stew. You can use the crockpot to cook your meat (either chicken, venison, or beef, etc.) for tacos. Just have the toppings ready to go in the fridge so you can assemble them quickly when you get home. I add all of the taco seasonings in with the meat in the crockpot so they get slow roasted in. You could also do the same thing with loaded nachos. Another idea is putting either chicken or pork in the crockpot with BBQ sauce, and then slapping it on a bun when you get home for pulled pork or pulled chicken sandwiches.

What you have is green onions. Chives are something totally different. I do the same thing with garlic except I use a small cookie scoop to put them on a lines cookie sheet. Place the cookie sheet in the freeer u ntil frozen then put into a large ziplock bag and keep in freezer. Then when you want garlic you have a dollop
Of garlic ready. It’s prob about two cloves and it defrosts quickly in the dish it’s being cooked in. Loving these recipes

We have always fried the mushrooms before freezing. For extra taste you can fry them with some bacon and/or onions. And later you just add them to the dish you want.

Something I grew up eating was 5 Bean Hotdish - which has devolved into 3 bean, then re-evolved into multi-bean hotdish as I've gotten older. I think my record is 7-9 types. Ground beef, kidney beans, baked beans, ketchup, mustard, bacon (diced). onion (an possibly other veggies like peppers), W sauce, and whatever other beans you want to include. Because I like the sweetness from baked beans, I generally go with one large can for every two regular cans of other beans. They go great with baked potatoes.

For the freezer, I ALWAYS keep bell peppers, celery, mushrooms, onions and garlic chopped up in the freezer. It makes my meals SO much easier. Everything I keep in the freezer I have never had an issue with. I would recommend freezing mushrooms.

I like to make chili for those nights we go to soccer and don't get home till late. And that can be made in the morning and left in the crock pot as well and just have your toppings ready in the fridge. You could always do meatballs for subs as well and keep them warm in the crock pot for after as well. Thanks for all you do keep up the good work ❤️

I have cut up hundreds and hundreds of jalapeño peppers without ever wearing gloves. Never was a problem. Last Summer, I was dicing up just a few and suddenly my hand was burning SO bad!!! I washed my hands with Dawn dish liquid and that made it worse. Then the pepper oil was all over both hands! I got online and read so many suggestions. Nothing was working. I was hurting so badly I thought I was going to have to go to the ER. Like I am not kidding, I was on fire hours later. So desperate, I went back to the internet one last time for help and read something I honestly thought was a waste of time but hey...! Yellow mustard! Per instructions, I rubbed a thin layer of regular yellow mustard on both hands. Waited 10 minutes for it to dry. Rinse and repeat. The moment I rinsed the second time, the pain was 100% gone!

Try soaking your rice for about 1/2 hour first. You may be able to get away from the parboiled kind by taking that step. We do it with all kinds of rice and find that it truly softens it up a bit
You also stated a few times that your family does not like crock pot meals. You dont have to do "casserole" type things in a crock pot.
I make a homemade onion soup mix (i dont like processed foods} But you can add frozen chicken breast, pkg of onion soup mix or equivalent there of, and cup of water. When dinner rolls around we can either add rice and veggies to our plate with chicken or we shred the chicken for quesadillas, make a gravy and serve over rice or on/in baked potatoes, make a warm chicken salad....
we do the same with all cuts of beef. Chuck roast with BBQ sauce is great in corn tortillas like a pulled pork, we love ribs so I will cut the rack in half and cook with BBQ sauce, 5 min before dinner we toss under broiler and have with corn on cob or cole slaw.

Mushrooms are fine for sauces, stews and casseroles when frozen. I would however allow them to freeze on a baking sheet, before bagging up as they rend to clump together otherwise. Not all slow cooker meals need to be stews casseroles or soup. Potjiekos is a meal that is slow cooked and quite delicious that can be done in the slow cooker and as a one pot meal would be ideal for your busy nights. Simply brown your meat with some seasoning and diced onions, then layer with your vegetables of choice, with the ones that take the longest time to cook at the bottom. Pour in a tin of tomatoes, with some salt and pepper for the veg, cover and slow cook for 4-5 hours. Serve with some crusty bread, rice or mashed potatoes

Wuss-ta shurr sauce. That's how it's said here in Mass where we have the city of Worcester (Wuss-ta not War-cess-ter) stolen from the Brits. Most of the towns and cities in New England came from English towns or names.i think the Brits say it similar

My sister has made pastor in her instant pot im sure you can make it in the crock pot. Weve even done a enchilada bowl and it cooks on its own while were running around the house or working. I sometimes forget to take out the chicken or meat from the freezer and the instant pot does amazing at leaving it juicy and cooking it with minimum effort. These of course are Mexican dishes im not sure if you'd enjoy them. I do baked potatoes also in the air fryer I can't remember if you had one or not but made a great way of cooking something fast.

I do the frozen garlic cubes also. However, with the amount of garlic cubes you use in each meal, it would benefit you to freeze them in larger chunks. I have a silicone ice cube tray that I use, and I also have another silicone puck bigger size that I got from Aldi. It would save you alot of effort. Because I never use only one of garlic!
