This is interesting! In the "Old Days, a square was an ounce. Today, most if not all manufacturers have swayed from this practice.
I was going to say something. I remember as a little girl baking with 1 oz square baking chocolate. May make it more fudgy.
Indeed and both Amy and Eric stated it wasn't "chocolatey" enough. The 1 oz squares were more practical and for marketing purposes, it is likely better to have smaller squares for "snacking" etc, as it is easier to inadvertently "polish" smaller little squares than the bigger 1 oz squares.
On many old recipes you need to double the Chocolate. Bakers Chocolate use to come as an 8 Oz bar, not the 4 Oz they are selling now. The Blocks of Chocolater were double in height. You can still get the 8 oz bars, but usually need to be ordered online. Great Video, looks delicious. Chocolate in the 1980's and earlier were double that size, each square was twice as big/tall. I have been making Mint Squares for 50 years and have personally witnessed the size reduction in the Baking Chocolate Bars.
Thanks Mark. That's the problem with "old" recipes is that if you never cooked them before, you may be unaware of the correct ingredient portion as most food packages have been downsized over the years. I agree that had they provided the weight of the chocolate, then that would have been more useful. But then, all they cared about was selling their brand of chocolate. I may have Amy double the amount of chocolate and maybe double the recipe so we can try a deep pie version. I think it would be even better 🙂.
Yes in the old days the chocolate from bakers use to come in much bigger thicker squares. So it would be more chocolate. I’ve had to adjust my grammas recipes that were like a lump of butter the size of an egg. Or enough flour to make a dough that will roll. Not a lot of insight into todays way of baking lol. But good job!
