Making Black Garlic & More

  • Today I show you how we make black garlic, along with a couple recipes for you to try!
    When you have an excess amount of garlic, it’s helpful to divvy it up into different categories: fermented honey, black garlic, garlic in vinegar, fresh garlic, frozen chopped garlic, dehydrated garlic, etc. . We grow more than enough for what we use each year.
    Recipe from video:
    2.5 cup flour
    .80 cup water (more if needed)
    1 1/4 tsp active dry yeast
    1/2 tbs salt
    1/2 cup peppers
    1:4 cup chopped black garlic
    1 cup extra virgin olive oil
    1) Add the yeast to warm water and bloom for 15 minutes
    2) Add in flour, salt, peppers, black garlic, and 1/2 cup olive oil and mix
    3) Knead until smooth
    4) Let rise in a warm area for an hour or til doubled in size
    5) Add other 1/2 cup of olive oil to 9x13 pan
    6) Stretch out dough, flip to cover both sides with olive oil, and finish stretching out to fit pan
    7) Poke holes throughout dough and let rise in a warm area for at least another hour. While it’s rising turn on your oven to 425
    8) Add additional toppings as wanted and bake for 25-30 minutes until the top is golden
    9) Cool down and enjoy!

    Lovely video on black garlic. I have an older version of a rice cooker that has instructions for making black garlic and have always wanted to try making it.
    I dont grow enough garlic yet to get me through a year lol usually by February, I'm back to buying it in bulk.
    I grow two types of hard neck which is a smaller type. One was smuggled into the US with my great grandparents and we have been passing it around the family since the early 1900s along with her walking onions.
    The other hardneck we found growing absolutely wild by one of the older country churches here.
    The elder of that church said that she was told its been there since sge was young and it was an escapee from the parish gardens.
    Irs a bit bigger than my grandmother garlic.
    I did add more of the white Italian type last fall and I'm trying out elephant garlic.
    At least we know vampire attacks on our persons are not going to happen with all the garlic I eat, lol.

      Oh that is fantastic, thank you so much for sharing this history! Our neighbor gave us a 300 year old variety of horseradish that we now guard with our lives. It’s thriving.
      We usually aim for about 150, but I believe planted 175 this year. I’ll have to check my notes. I just planted walking onions for the first time and hope they come up in the fall! I hear you plant them once and they keep coming back.

      I personally think she's fine. There's no annoying music to mask her voice.
      She does speak softly, but I turned on the CC and it followed her words decently in English.
