    INGREDIENTS:
    2 pounds Certified Angus Beef ® chuck shoulder roast, cut into 2-inch cubes
    3 teaspoons coarse kosher salt, divided
    3 teaspoons garam masala, divided
    2 tablespoons ghee (or canola oil), divided
    2 yellow onions, thinly sliced
    1 tablespoon finely minced garlic
    2 tablespoons finely minced ginger
    2 bay leaves
    1 cinnamon stick
    1 star anise (optional)
    1 teaspoon turmeric
    1/2 teaspoon cayenne
    2 carrots
    2 Yukon gold potatoes
    2 cups basmati rice
    1 teaspoon (.2 gram) saffron threads (optional)

    I'm Indian-American and love this convenient recipe and I love delicious beef. My Indian family would often pressure cook beef to make it tender. If people don't like the crispy burnt rice at the bottom, just layer the veggies or beef at the bottom and put the rice on top. Some people like it crispy.

    This looks great and there are some interesting ideas here that I would try. I have to point out, however, that searing beef is a Western technique and not performed in Eastern cooking at all. If you sear the beef, you actually inhibit the meat's ability to absorb and be infused with the spices. You should skip this step. Also, the beef should be marinated, either wet or dry, for a couple of hours or overnight before cooking.

    My curry powder is 2 tbl ground cumin, 1 tbl ground coriander, 1/2 tsp turmeric, 1/2 tsp cayenne……then, there are other tastes you can add…..mustard seed, fenugreek, curry leaf, black pepper, cinnamon, cloves, cardamom, etc…….there are oh so many spices. I just don’t use hing.

    Aren't carrots and potatoes used in veg biryani or pulao? Anyways everyone has different preferences. The food looks great btw.

      Yes, we don't use carrots in biriyani. Only potatoes are fine.

    This is not authentic biryani and carrots, potatoes are a big no. I don’t even see the spices that are supposed to be in biryani. But a nice try
