    檸檬炸蝦
    材料:
    刀嘜純正花生油
    急凍中蝦(已去殼)1磅
    檸檬2個
    辣椒仔1隻
    處理:
    1. 急凍蝦仁,清水解凍。
    2. 蝦仁解凍後,倒去水分,加入粗鹽1茶匙乸1分鐘,清水沖洗乾淨,擎乾水,廚紙索乾。
    3. 蝦仁,加入調味料:
    a. 鹽1/4茶匙
    b. 胡椒粉半茶匙
    c. 鮑魚汁半湯匙
    撈勻。
    4. 其中一個檸檬,清水洗乾淨,用菜刀拍鬆,1開2 在容器內加入清水200毫升,搾出檸檬汁在清水內(不要有核在內),加入:
    a. 糖1湯匙
    b. 生粉半茶匙
    攪勻。
    5. 辣椒仔,去椗,打直1開2,去籽,切碎。
    烹調:
    1. 大火在鑊內燒熱油500毫升。
    2. 在蝦內,加入:
    a. 生粉1湯匙
    b. 麪粉2湯匙
    撈勻。
    3. 放一雙筷子在鑊內,有氣泡升上來就可以了。轉中火,放蝦落鑊,炸至金黃色,攪動幾下,撈起蝦。
    4. 轉大火,油再滾起時,放蝦落鑊再炸30秒,撈起蝦,擎乾油。
    5. 大火煮滾處理(4)的檸檬芡汁煮至有少許稠厚,熄火,攤凍。
    6. 另一個檸檬,切片圍碟邊。
    7. 利用處理(4)的檸檬,磨少許檸檬皮碎在蝦上面。
    8. 灑上辣椒粒。
    9. 檸檬芡汁淋碟邊。
    10. 完成,可享用。
    Deep frying shrimps with lemon
    Ingredients:
    Knife brand premium peanut oil
    Frozen shrimps 1 lb (medium size with no shells)
    Lemon 2 Nos.
    Chili 1 No.
    Preparation:
    1. Frozen shrimps, defrost in tap water.
    2. Shrimps have been defrosted, pour away water. Season with 1 tsp of cooking salt for a minute. Rinse thoroughly. Drain. Dry with kitchen towels.
    3. The shrimps, add seasoning:
    a. Salt 1/4 tsp
    b. Pepper 0.5 tsp
    c. Abalone sauce 0.5 tbsp
    Mix well.
    4. One of the lemons, rinse with tap water. Beat well with chopper lightly. Divide it into 2 shares. Add in 200ml of water in a container. Squeeze the lemon juice into the water (with no seeds). Add in:
    a. Sugar 1 tbsp
    b. Tapioca starch 0.5 tsp
    Mix well.
    5. Chili, cut its anchor. Divide it into 2 shares vertically. Remove seeds. Chop well.
    Steps:
    1. Heat up 500ml of oil at high flame in wok.
    2. The shrimps, add in:
    a. Tapioca starch 1 tbsp
    b. Rice flour 2 tbsp
    Mix well.
    3. Put a pair of chopsticks in the oil. If there are bubbles arising in the oil, that is OK. Turn to medium flame. Put shrimps in wok. Deep fry them until they turn into the colour of golden yellow. Stir them. Pick them up.
    4. Turn to high flame. Oil boils up again. Put shrimps in wok, deep fry for 30 seconds more. Pick them up. Drain.
    5. Heat up the lemon sauce in Preparation (4) at high flame, until it turns a little bit thick. Turn off fire. Wait for cooling down.
    6. The other lemon, slice it and put them alongside the plate.
    7. Make use of the lemon in Preparation (4), grind little lemon skin crumbs on the shrimps.
    8. Put chili cubes on top.
    9. Lemon sauce, is to be put alongside the plate.
    10. Complete. Serve.

    檸檬炸蝦
    材料:
    刀嘜純正花生油
    急凍中蝦(已去殼)1磅
    檸檬2個
    辣椒仔1隻
    處理:
    1. 急凍蝦仁,清水解凍。
    2. 蝦仁解凍後,倒去水分,加入粗鹽1茶匙乸1分鐘,清水沖洗乾淨,擎乾水,廚紙索乾。
    3. 蝦仁,加入調味料:
    a. 鹽1/4茶匙
    b. 胡椒粉半茶匙
    c. 鮑魚汁半湯匙
    撈勻。
    4. 其中一個檸檬,清水洗乾淨,用菜刀拍鬆,1開2 在容器內加入清水200毫升,搾出檸檬汁在清水內(不要有核在內),加入:
    a. 糖1湯匙
    b. 生粉半茶匙
    攪勻。
    5. 辣椒仔,去椗,打直1開2,去籽,切碎。
    烹調:
    1. 大火在鑊內燒熱油500毫升。
    2. 在蝦內,加入:
    a. 生粉1湯匙
    b. 麪粉2湯匙
    撈勻。
    3. 放一雙筷子在鑊內,有氣泡升上來就可以了。轉中火,放蝦落鑊,炸至金黃色,攪動幾下,撈起蝦。
    4. 轉大火,油再滾起時,放蝦落鑊再炸30秒,撈起蝦,擎乾油。
    5. 大火煮滾處理(4)的檸檬芡汁煮至有少許稠厚,熄火,攤凍。
    6. 另一個檸檬,切片圍碟邊。
    7. 利用處理(4)的檸檬,磨少許檸檬皮碎在蝦上面。
    8. 灑上辣椒粒。
    9. 檸檬芡汁淋碟邊。
    10. 完成,可享用。
    Deep frying shrimps with lemon
    Ingredients:
    Knife brand premium peanut oil
    Frozen shrimps 1 lb (medium size with no shells)
    Lemon 2 Nos.
    Chili 1 No.
    Preparation:
    1. Frozen shrimps, defrost in tap water.
    2. Shrimps have been defrosted, pour away water. Season with 1 tsp of cooking salt for a minute. Rinse thoroughly. Drain. Dry with kitchen towels.
    3. The shrimps, add seasoning:
    a. Salt 1/4 tsp
    b. Pepper 0.5 tsp
    c. Abalone sauce 0.5 tbsp
    Mix well.
    4. One of the lemons, rinse with tap water. Beat well with chopper lightly. Divide it into 2 shares. Add in 200ml of water in a container. Squeeze the lemon juice into the water (with no seeds). Add in:
    a. Sugar 1 tbsp
    b. Tapioca starch 0.5 tsp
    Mix well.
    5. Chili, cut its anchor. Divide it into 2 shares vertically. Remove seeds. Chop well.
    Steps:
    1. Heat up 500ml of oil at high flame in wok.
    2. The shrimps, add in:
    a. Tapioca starch 1 tbsp
    b. Rice flour 2 tbsp
    Mix well.
    3. Put a pair of chopsticks in the oil. If there are bubbles arising in the oil, that is OK. Turn to medium flame. Put shrimps in wok. Deep fry them until they turn into the colour of golden yellow. Stir them. Pick them up.
    4. Turn to high flame. Oil boils up again. Put shrimps in wok, deep fry for 30 seconds more. Pick them up. Drain.
    5. Heat up the lemon sauce in Preparation (4) at high flame, until it turns a little bit thick. Turn off fire. Wait for cooling down.
    6. The other lemon, slice it and put them alongside the plate.
    7. Make use of the lemon in Preparation (4), grind little lemon skin crumbs on the shrimps.
    8. Put chili cubes on top.
    9. Lemon sauce, is to be put alongside the plate.
    10. Complete. Serve.
