- Miguel Trinidad started working in the hospitality industry as a delivery boy but found his way into the kitchen, and went on to culinary school and jobs as an executive chef. Then he met Nicole Ponseca, a Filipino native, and on a backpacking trip through her homeland, fell for its multicultural cuisine. They went on to open two critically acclaimed restaurants, Maharlika and Jeepney. Last year, they published "I Am A Filipino" named one of 2018's best cookbooks by the New York Times and other publications. He joins "CBS This Morning: Saturday" to discuss his culinary journey.

His last name is Trinidad and his parents are from the Dominican Republic, and he is writing about Filipino food!👍👍 THAT is awesome!!
And there's so many Trinidad in the Philippines
lol, it's not that much of a stretch, Filipino food is like 90% Spanish food.
@@kayflip2233 It's more like Chinese since almost all filipino food is cooked with soy sauce and fried.
@@kayflip2233negative. People need to stop with this false narrative
Cool! He is not even a Filipino
He is but his family migrated to US and he was born there . He visited Philippines tasted the food and soon open restaurant in new york
@@danielaguirre9137 wrong
@@Snookeypus go watch his episode in food channel almost 30 mins you can see it there. No need to prove my point
Clearly you didn’t understand what you’re watching @daniel aguirre
0:15 he's of Dominican descent.
Thank you Chef 💖 I know my fellow Filipinos love you and are very proud of you 💖
He talked to Acheng Lilia of Pampanga. The Queen of Kapampangan cuisine. Pampanga in the Philippines is the culinary capital. Mabuhay ka!
Nice guy, he's being Filipino born from the heart. Thank you Sir.
Even the name of the resto is sooooo Filipino! Maharlika Nd Jeepney! 👍🏽👍🏽👍🏽
The late bourdain fell inlove to lechon of PH
He fell in love with sisig, if i am not mistaken.
Im so proud being FILIPINO..thank you so much sir...
I think the great thing about Filipino food is that it's still evolving. There are no set rules to it and I don't think there will ever be any set rules. It's a young cuisine from a young culture and I'm excited what it will become in the future.
Thomas Christopher White huh? Just because you discovered it recently doesn’t mean it’s a young culture and young cuisine. Adobo for example was “reinvented” by the Spanish in the 1600s when they found this dish that Filipinos cooked in vinegar. They just christened it “adobar” (to marinate) but it has existed even before they came.
its not young, culture of spanish, chinese, american and more are incorporated with filipino dish for centuries, and it has been in the US for years, the food is already recognized as well...the most talked about was adobo, now added to the list were crispy pata, lechon, karekare, lumpia shanghai, and the dessert halohalo which is also served in jolibee as i watch mukbangs in youtube...but the evolution part i cannot disagree with that
No.
Para Po malaman nglahat, hindi Po young cuisine Ang Filipino foods, open Kasi Ang mga pagkain natin meaning NASA kumakain Kong gusto Niya maalat, matabang, maasim by adding salt, pepper, chili o lemon ganyan tayo diba pagkumakain kaya nga may saw- sawan, gets niyo.
Young?its only now people want to try new
Great!!! Filipino food should be shared.
That's an honor for us here in Philippines I'm so proud
I’m Filipino and while it’s nice to have our culture recognized, I really don’t want Filipino food to go mainstream 🤣 I love that Filipino food has a sense of exclusivity and that people will either have to find and fall in love with it themselves. I also don’t like it when they gentrify Filipino food or when they have a “fusion” or whatever. I prefer it done traditionally.
Waah selfish. You don't wanna share kare-kare to the world? But I agree with you. 🤣🤣
How about laing?
Ganda Gandara embarrassing? No. I think karinderya is very authentic. What I meant is in America, Filipino food is only available in cities with a Filipino population and if ure non Filipino, only way u could get Filipino food is if u know somebody who’s Filipino and get invited to kainan. That’s what I meant by exclusivity.

eric putian Laing is delicious 😝😝

Thank You Very Much Chef Trinidad for PRESENTING Filipino food!
Way to go chef! More power
We love u chef trinidad!😘
Wait - why is Nicole Ponseca not in this segment given that she’s Filipino & they’re talking about Filipino food?
Bcoz that is the main story - a US-Born-Dominican owns a well known Filipino Resto in NewYork..
They were featuring the chef. It just happened that he is in to Filipino cuisine. Which was actually good because it was featured in the mainstream tv station.
They are husband and wife now, any problem. Nichole is taking care their business while the guy is promoting it.
busy daw siya
Maybe she's having a summer vacation in the Phils. during this time 😂😂😂
We love u, you are proud to be Filipino. Godbless you more
He's not a Filipino..
Great.
Filipino is all about experience and memories.
Its comfort
Yeehhhhh,, PEOPLE IN THE WORLD,, YOU SHOULD START TRYING PINOY DISH,, BEST COMFORT DISH IN THE WORLD.,, WITH HEART...//
I wish they would stop saying "Multi-Cultural" to describe Filipino culture, food, and history. I am so tired of it. Most people when they say "multi-cultural" seem to think that it was something that only happened recently. Our ancestors in the Philippines created this beautiful culture that we live, speak, and eat through hundreds of years of joy, sadness, pain, and hopefulness. This is not some "fusion" of things that just happen to be in front of us right now. Our history is full of commonality and similarities with the surrounding cultures and peoples of Southeast Asia, the South Pacific, and Latin America- this is what makes us who we are, but we are not just one of those, we are all of those, and this is what makes us great! Stop trying to find greatness in how you want other people to describe you. We are who we are and that is great.
Also, I want to thank our fellow Islenyo, Miguel Trinidad, for acknowledging our food and culture and appreciating it so much that he himself is appreciated for it. I am touched at how much he loves us.
WOW! FILIPINO FOOD THE BEST COMFORT FOOD EVER...... DELICIOUSOOOOOO!

This guy immersed himself in the Filipino Culture.
I saw him at an internet cafe shirtless not having taken a bath for 3 days straight, playing some Moba games.
How's the game of street fighter Mena.good luck to your game and I'm a Filipino fan of yours.you love Filipino food too
Not taking a bath for 3 days is not a Filipino thing. It's a slob thing.
I hope chef thomas raquel watches this. He doesnt have to cater filipino cuisine to the world.. But please do not deny where you came from. Watch this and watch how someone from dominican republic be proud of filipinos.

THANK YOU FOR LOVING FILIPINO FOOD, GODSPEED!!!
The anchors are just dumb bland. Its a cuisine. Miguel should have not brought even one dish because obviously they are not interested nor into it
Ikr maybe theyre just thinking about their health
Filipino food is not for everybody, which is true for any other cuisine. At least they featured him on the show. Why do you have to be so pessimistic - nitpicking at the anchors just because they didn't show the reaction that you wanted...jeez. You must be fun at parties.
Anchors are really eating and you can see their satisfactions with the meals ...but you have to understand it's working time ,so they"re are not suppose to eat as like lunch time ...but am sure after that everybody in the studio will have their sumptious lunch....even here in Lebanon when I started cooking our own foods , they don't want to try their Arabic foods anymore ....asking me why I dd'nt do it B4 , cz Filipino viands and delicacies, are much more delicious, nutritious and really tasty according to them
It's an am slot talk show, not a food review
They're in an interview and in front of a camera. What's the point if they're just going to eat and not talk about the food?
We love and RESPECT you Miguel! Btw, I'm filipino and my best friend is Dominican Lol
Salute Thanks sir philippines food is extra ordinary what ever the taste you want we will give it to you no matter........
Don't forget the Filipino series of SILOG's!!!! Breakfast to Dinner :D
I love Filipino dishes. Much Aloha!!
To all who are new to Filipino food, don't compare it to Thai food because they''re tastes are on both ends of the stick. Thai food is more on the spicy side. Filipino food, however, is more on the savory /salty side, usually paired with rice. Filipino food is more similar to Chinese dishes, mainly because it's largely Chinese influenced. So, if you wanna know what dish Filipino food tastes like, it's Chinese food, and a bit of Spanish, too.
Thank you chef
Filipino Food--some are not known but once youve taste it. feels like heaven!!
Salute to you Chef☕😁🇵🇭
Salute Chef Miguel! Mabuhay p0 kay0❤

Thank you for your love of Filipino food, chef! :) Our food has been maligned and misjudged by those hoity toity ones who think that all food should be haute cuisine.

Lumpia and adobo! 💕💕💕
Hey, i am a Filipino😉Filipino food is so unique
Lea Delacruz Dela Cruz
Filipino here!
Mind blowing
Proud Filipino!
All this time I thought Miguel was Filipino! Mad respect!
You don't hear any Filipino screaming cultural appropriation they actually appreciate other cultures proud of Filipino food...
It's about time! Love Filipino dishes! Where's sinigang??
Not even Filipino but still respect
Filipino food is still underrated bcoz it's being overshadowed by the beliefs of foreign people that all we eat is exotic foods like eating worms and balut(duck embryo).. But our dishes are one of the most diverse and easiest to make.
I'm also a trinidad. I believe Trinidad surname origin came from Panay Island (Aklan is the place to be specific, the origins of Trinidad Clan) Panay is located in the heart of the Philippines. It's a place which mostly visited because it is near or the only access point for those who want to go to Boracay Island.
My goodness!!! All of my favorite food ♥️
I saw a video on RUclips of someone interviewing Nicole in Jeepney. She seems so funny and bubbly.
Proud pinoy bow!
Love Filipinos food .

I bet his food is delicious 😋 because he went and visited the source for the proper ingredients and techniques.

Very cool video 👍🏼😊
He is a Filipino brother even if he’s not Filipino 😊❤️🇵🇭
By the way, Maharlika is the original name of the Philippines before Spanish colonization
Yum everything!
Mean while the most popular Filipino fast food chain Jolibee are "Filipino version" of western foods or Filipino version of McDonalds. Hope they will include local dish or Mang Inasal menu in there Jolibee menus abroad.
Well mang inasal is owned by jollibee, i dont know why they havent put up one abroad
@@watersports1381 Business wise, mang inasal's traditional menu is not enough overseas unless they will all more Filipino dishes on it. Like adobo and sinigang etc.
Mang inasal can go main stream, that is actually a good representation of our food.
I am sure they will get hooked to it, western loves barbeque and mang inasal will definitely fit right in, foreigners who have tried it cant stop raving about it
@@maccon3977 In my observation, mang inasals menu has to be adjusted for abroad. Most of the west doesn't really like pure meat with steamed rice. There has to be some veggies, spices etc. Max's a little bit slow expanding abroad mean while jolibee which is branching very fast abroad should have a bigger chance to introduce authentic Filipino foods. But, eh...
@@daneslater3101 good point, rice.isnt their staple, while we use rice to balance out the richness of filipino food
Wow!
I will definitely go there when I visit New York. I hope the Chef is not using MSG to enhance flavor of the food.
Wow!❤️❤️
salamat
I love Sisig. So good.
Great interview!
