I've had this bread in Zamboanguita, every time we visit, I buy as many as possible, because it sells really fast, by lunch time it's all sold out. Really delicious, specially paired with sikwate or freshly brewed coffee.
My wife and I were talking about this, after trying out so many breads that are not filipino, that we actually enjoy this bread more than anything else. The taste, texture, mouthfeel, aftertaste, serving size, ease of consumption is perfect. We also said the time of this bread will come.
I’ve seen a lot of pan bisaya along Dauin and Zamboanguita, Negros Oriental. They must have started this long before modern bread making ingredients became more available. This bread taste really good and they using tuba! There must be some rich history about this since even before I was born pan bisaya is very common in Negros Oriental. Probably different variation of this recipe even around the entire Visayas.
Siquijor has always been a hidden gem. 20 years ago me and my barkada always goes there for the weekend, backpacking and camping along their pristine beaches, local people where we often stay became our friends. One of the best people in our country.
