    Had this with miyouk guk and it was delicious! Had to make new batch for tonight's soup, no time for fermentation this time, but still good! Waitress gave us da dae ghe when we had kalbi tang and it was so good, but when we went back, the owner told us we should have just asked for spicy next time. Restaurant closed shortly after that.

    Hi Helen! This paste is wonderful! I made 2 batches: one which is fermenting in my fridge, and the other batch I used as a base for a pork rib jiggae and it tastes amazing! Can't wait till the fermenting batch is ready!

    Hi Helen,
    I just made this and learned that you can’t use a food processor with gochujang it so thick. I ended up getting a mortar & pestle, and doing it like our ancestors 👵🏼! The flavor is amazing. I can only imagine how it’s going to taste after the fermentation process.

      Hi Andrew Tran👋 Yes, some elbow-grease always adds more 💚 to the dish.
      For this sauce, just hand mixing the GoChuJang and GoChuGaRu with the puréed garlic/onions/veggies is best. And, u r correct👍. The longer it ferments, the tastier it is🥰. Thanks for cooking Korean food with me🙏

      Hi @TommyMai YES, indeed🤗 This seasoning can be used for many dishes, both Korean and Korean-Fusion dishes. I also use it as a base to thin it out to make other sauces, too. I also add some of it to my favorite bottled BBQ sauce to make it spicy and YUM-YUM. I thin it out with water and soy-sauce, use it to marinate meat for BBQ grilling. And, of course as a base seasoning for tons of Korean stews and soups. For example, I use it to make BuDaeJjiGae ("army stew"), spicy stew with canned meat, beans and fermented kimchi....SO YUM!

    I just made it and it tasted amazing! I added just tad more of soy sauce, Mirin and fish sauce to cut down on spiciness. Can’t wait for it to ferment for a deeper taste as you showed. Thanks for the recipe!

    Hai!! I had a question about dadaegi, I just followed your recipe to make beef bone broth and was excited to make some sauce to spice up the Seolleongtang I’m about to make. To make dadaegi do I use everything else in this video with the same amount and ratio except the gochujang? The written recipe link in the description isn’t working anymore 😢 and I tried searching on your website and couldn’t find the article about this sauce. Thank you!!

      @@cI0ra3m0n Hi 👋 Yes, follow the same ratio, minus the gochujang. Make sure to let it ferment for at least a week in the fridge. A month later, it will taste even better

    I just found your channel and I really love the way you cook your personality very nice and I love that you share stories about how it was done back in the day like when you went to the market with your mom a lot of kids were freaked out seeing a chicken like that getting killed but I wanted to ask you is there any substitutes for the red chili pepper flakes or any of the spiciness for people who can’t eat it I like spicy food but I can’t eat hot food because of my stomach and there’s so much I want to taste like I want to do your tofu sauce soup , and I’d like to try the army soup and Jim cheese soup but it’s homemade spicy hot I mean I like spice I make my food spicy but I can’t eat real hot food if you have any alternatives could you please let me know I would appreciate it I don’t want to not be able to eat this food because I can’t eat it hot 🥵 thank you

      I completely understand! When it comes to spiciness, it is totally personal, even among my Korean friends that have HUGE tolerance for spicy foods. My tolerance for spicy food compared to these friends is LOW.
      OK, you can make this Spicy Seasoning Sauce by replacing the Korean Red Pepper Flakes and GoChuJang with DoenJang/Korean Soybean Paste (if you have a little bit of tolerance for spiciness, add a bit of Korean Red Pepper Flakes and GoChuJang). Just follow the same recipe. You can buy DoenJang at any Korean grocery store OR you can order it online at www.modernpepper.com/store
      So when you want to make spicy Korean dishes, supplement the Korean red pepper flakes with this non-spicy/less spicy seasoning sauce. I mean these spicy dishes will not taste the same as using all the spicy ingredients BUT you can mimic the taste in a non-spicy way so that your stomach will not suffer.

      👋Beth Pestcoe Pestcoe You can just omit the red pepper flakes and just make it with the GoChuJang/Korean Red Pepper Paste. OR if you want to make it completely non-spicy, use DoenJang/Korean Soybean Paste instead of the red pepper flakes and GoChuJang.

      Hi 👋 @Jenni kimchi Absolutely! Depending on what u r seasoning, I would thin it out a just little of water and/or mirin and soy sauce. I would also use this as a glaze, too. Especially, as a finishing glaze (put it on 5 minutes before taking the meat off the grill or oven) on grilled meats or fish. If using it as a finishing glaze, I would also add a little bit of honey.       @Daisy Martinez I just saw the photo. It looks like a delicious 설렁탕 meal. The red sauce in the photo looks like DaDaeGhee (다대기) which is served as a spicy condiment with Seol-Lung-Thang 설렁탕 (bone marrow soup) and other soups. It looks like they made this 다대기 a bit runnier than usual. Perhaps they added more puréed white onions and/or water or the Seol-Lung-Thang broth....? It looks like their family recipe. Looks YUM!
      U can make this DaDaeGhee 다대기 by following the same recipe for this Spicy Seasoning Sauce, minus the GoChuJang (Korean red pepper paste).
