Pasta dishes are your best meatless meals. Also stir fries with tofu are so easy.
Pasta is a hit with our youngest, but my 20 yr old won't eat pasta at all. It is so weird. ;)
Everything I Know About Love by Dolly Alderton is another book with recipes in it. I have heard amazing things, but have not read it myself as it's a memoir, and I don't often read those.

I'm going to recommend a few books in a few genres so that you will have some choices because I don't remember if you told me your favorite genres. So, for fantasy, I recommend Green Rider by Kristen Britain - For horror, I recommend The Only Good Indians by Stephen Graham Jones - For romance, I recommend The Graham Effect by Elle Kennedy - For Sci-fi, I recommend Project Hail Mary by Andy Weir. I hope you find one that you love!!
