    Ive been watching live fire Cooking for years and i never saw this video. I honestly could have watched this for an hour! Thanks for the time it took to cook. No one ever talks about it.

    Rather than slice across the meat which may allow juices to escape, why not stuff the marinade between the skin and the bird?

      You could do... There's more than one way to skin a cat, but I score the skin to help speed up the cooking time also, and cooking to temperature will ensure the meat stays juicy
